Where Hope's Cafe created a loyal following for her cinnamon rolls in this location, the new owners have stepped up and they are matching her on quality of food, providing higher quality coffee (Italian coffee!), and a much improved ambiance and increased comfort. The Italian-style floor tiles, simple yet elegant chairs and table, and refined and elegant-feeling counters, display cases, and cabinetry are a vibe we haven't had in the Gresham/Troutdale/Fairview area and its a welcome addition to this area! I'll add that the chairs they selected are super comfy too--difficult to say that about most coffeeshops! In the background was a concious-of-conversations level of soft jazz music playing. Do note, though, if you have noisy and rambunctious children perhaps choose the tables outdoors or get a "to go" order. Plenty of other local shops have kids play areas; this one doesn't and for this busy Mimi with exuberant grands I'm relieved to have a quieter option available here! I tried a hot, White Chocolate Raspberry Latte and a Pistachio Cornette. Both were delicious, though $14-ish for just two items seemed a bit pricey. Their Large (16oz) lattes have 4 shots of espresso. I asked to only have two because I can't handle that much caffeine. I thought they'd reduce the price since there were fewer shots; next time I'll ask for that since they charge more if you ask to add shots. They got it completely right on the balance of coffee, milk, and sweetner--not syrupy sweet like so many places and the slightly tart sprinkle of freeze-dried raspberries on top is delightful! Then there is the Pistachio Cornetto--melts in your mouth like a fine French croissant and the pistachio cream filling is smooth, sweet, and a dreamy pistacho flavor. All in all--despite the few criticisms stated here--Simply Coffee is worth a trip here if you are looking for a laid back, classy, quiet environment to sip your favorite beverage and take in the simplicity of your day. Ooh, the pistachio croissant I had here still haunts my dreams. It was honestly one of the best pistachio-flavored pastries I've ever had -rich, nutty, buttery, and completely irresistible. The cappuccino, unfortunately, wasn't particularly memorable, but I would come back for that croissant in a heartbeat. It was that good.To top it off, the staff was incredibly sweet and kind, making the whole experience even more enjoyable. If you're a pistachio lover, do yourself a favor and order the croissant. I loved this place so much! The staff is so friendly! I got to meet the owner, Audra. She is so friendly and welcoming. I was there studying for hour. She checks in to make sure everything is okay and it seems like she really wants to get to know the community. Don't know what to order? No problem. She will help you come up with fun drinks. Abby, the barista made my day as well. She makes really yummy drinks. The food looks and smells amazing! I hope they brink in vegan/gf options soon. The atmosphere is lively and CLEAN! Good on you, baristas. I think that was about the BEST coffee, (Cookie Butter Latte), I've ever had. Now I can't stop thinking about it.

I needed a place to do some homework and study. And I normally do that in Portland. But I wanted to be close to home so I used Yelps guidance for a good coffee shop. There are lots of shops in Gresham but I felt curious about this particular shop because like the name of the restaurant, it's "Simply Coffee" I also got a cornetto which is this amazing croissant with a filling. I chose hazelnut of course :) ordered my coffee, and lucky me there were lots of empty tables, I'm over hearing that the current owner recently took over or something along those lines. It's cute, and bright in there. Very simply designed with your perfect imagination on what a calm morning should feel like. When I arrived there were 3 people, and as I continued to study and eat eventually people kept creeping in, including this set of ladies that patiently waited for the reopening of this cafe. Side note: one of the ladies recommends everyone peeks at the renovated bathroom! I don't blame her, it's cute! I also did notice a lot of coffee business partners come in for a drink, some driven from Seattle, one guy who travels to make sure the coffee machine works right. They ran out of some flavors for a bit and the owner laughed and said I have to replenish before someone else buys out my syrups again! And she also ran out of milk! That's a good sign I think! Very friendly and young her cafe looks trendy, and her personality at the register was awesome. read more

Came here after seeing a tiktok, croissant was delicious very filling, crunchy outside and nice and soft inside. Probably my favorite so far. I got the cookie matcha and the cookie latte. Matcha was okay i give it about a 6/10 it was a bit on the milky side so you couldn't really taste the matcha. The latte i give it about a 4/10 it had a burnt coffee after taste? didn't really have the cookie hints from the foam, just wasn't really a good coffee. They do take awhile to make your drinks/order, i had about 1 customer ahead of me and waited around for about 10 mins? the customer in front of me only had 2 items. other than that, it is a cute spot but if you like coffee or matcha maybe try somewhere else? read more

This is a brand new place. It's been open for about a week. The owner is a young woman that bakes everything herself. What I like my body so far is that and the music is not obnoxious. They have many tables for studying or working. They also have good looking treats. My latte was decent. We will try and come here on the weekend I'm not weekdays because they close at 4:00. Glad I got to try this cute, new cafe! The owner was very friendly and helpful from the moment we walked in. The creme filled croissants caught my eye, and she told me that the cremes are from Italy! I went with the pistachio one, and it had a strong nutty flavor while still being sweet (whereas some pistachio flavored things don't taste very nutty at all! This was a pleasant surprise!) I also got a White Hazelnut Delight latte, and it was delicious! The coffee is the right balance of bold but smooth to my taste - I will definitely be back! read more

It is a cute space that seems to still be working out the kinks. I had the pistachio cornetto which is Italian for croissant filled with pistachio cream. We ate a lot of those when we were in Florence Italy. It was ok and so was the coffee cake. They only have small little cocktail napkins and I ate with my hands. It was quite messy. I'm giving three stars because it took forever to get my brother's drip coffee. They did have to brew a pot first which they did not communicate. He asked for vanilla flavoring and he said he couldn't taste it. He then had to ask for half and half as they didn't really have a drip coffee station set up. They were quite busy and only one person taking orders and not filling them as the second person chose to schedule an interview during the 10am hour on a Saturday. She was sitting at a table talking to a potential employee while the other girl was drowning. Please rethink that strategy. Maybe you could hold interviews later in the day when it slows down a bit. She was easily 10-15 orders behind when we left. They also do not have an official bussing station for the dirty dishes and I didn't see a trash can to discard the many little cocktail napkins I used.
