The program is fast-paced, and what you take from it really depends on the effort you put in. Chef Michel stood out for his calm and focused teaching style. His clarity and composure made it easy to absorb complex techniques. He was always prepared and skillful about course-correcting any issues without disrupting the flow of the class. He also shared occasional operational insights, like references to Nevada's HACCP, that were especially helpful for those interested in starting a business. Chef Amaury's perfectionism was equally impressive. His attention to detail and creative standards challenged us to be more thoughtful and precise in our own work. Even for those with experience, it's worth attending. If you have specific areas you want to develop, both chefs are approachable and open to questions.
