This place is kinda an institution in town and locally. It's at its core your basic burger place with an abundance of visual road side Americana to look at. You can eat inside or out, it seems to have lots of seating. The green chili cheese burgers where terrific and surprisingly they are made to order and cooked as you requested! This place is an amazing lil burger spot!!! It has the hubby, who is quite the burger snoot, actually raving about how good and fresh tasting it is! He cant wait to go back for more he said! I went in on 7/5/2025 and ordered for my wife and I and placed an order (which was charged to my credit card) and waited. It was pretty busy, so I expected a little wait time, but after roughly 45 minutes I started to notice that people that had come in well after me were getting their food, but not us. I went to check on my order and was told that the ticket never printed, and I could either order something that would cook faster ( which I didn't want), have the food put in again and wait, or get a refund. There was no option to take my order and put it in front of all other orders to get us served after their mistake. I took the refund, sent the restaurant staff a message outlining the issues ( which they did not respond to, no shock there) and now know I will never try and eat there again. As a restaurant that has a great deal of tourist traffic you would think they would care about how customers are treated by their staff. Choosing a place for lunch when traveling always begs the question, "local or chain?" More times than I care to admit we choose chain. Today we opted for a well established local spot that is adapting for COVID-19, serving up local food and not taking itself too serious. On this brisk Friday afternoon the restaurant was locked and all orders were taken and delivered via the take out window. Picnic tables were available but most of the locals were opting for grab and go. Sparky's serves a varied menu with burgers, barbecue, hot dogs, fish, ice cream and expresso but the draw in Hatch is the chili toppings and sauces. The posted menu features photos of the combinations where most highlight chili. I tried the chili cheese dog with cold slaw and a drink for $6, My husband opted for the Friday fish special which included four pieces of beer batter fish, sauce, a drink and side ($10). The cold slaw was fresh and included pineapple which helped balance the heat from the chili sauce. The chili dog was smothered in cheese sauce, beans and the trademark green chili sauce. The dog was small but the toppings were generous making it a good lunch choice. The fish had a good, but unusual sauce that tasted like it was made with puréed cottage cheese and spices. Items are cooked to order and names are called over a loud speaker and packaged with plastic cutlery and ample napkins. Credit cards are accepted, tips are encouraged and masks were worn. Sparky's reminded me that when traveling and answering the lunch question the answer needs to be "local" much, much, much more often. read more

Hello everyone, G man here again. I've been coming to this place for over 10 years and after Covid, they have changed a lot of things probably not for the best. They've been focusing more on shirts and souvenirs, instead of the quality of the food. I was recently at Sparkys two weeks ago. Friday on my way to Wet and Wild from Albuquerque, I stopped there and asked for the Oinker burger medium well and they gave me an overcooked burger. They have changed their fries to seasoned fries. Not only that but they were cold, like if they were sitting on the warmer for a while. This not only happened once but twice. Sunday on our way back home we decided to give it another try and had the same problem (Fries cold and burger overcooked). The fries seemed to be cooked in dirty oil. This place didn't used to be like this. That's probably why is bothering to me. For someone that comes in for the first time it might be OK. But for someone who's been coming here regularly and see the quality of the food going down is disappointing. They also changed the way they prepared the Pull Pork. Oh, Sparky's! You are so spunky and fun! When we arrived, there was such a line that almost 10 people were waiting OUTSIDE the door! We chatted with the people in line and found that almost everyone was from either Las Cruces or Albuquerque! That's the draw this place has! Sadly this restaurant has really gone down hill!! We have loved this place for so long. We went there last week and we're so disappointed at the quality of the burgers and fries. The burgers were not fresh and the meat was nothing more than a burger patty you'd buy at a store. Far far cry than what the place used to serve. The fries were cold and stale and dense. Barely cooked at all. We've never been more let down by a mom and pop place. We've loved and supported them for years. I'm Not sure if it's new ownership or bad management. The atmosphere was depressing, definitely not the same lively fun atmosphere that it's always been. We received pulled pork, sauerkraut & sliced bread... Someone else's order! BUMMER:( especially for the other folks who had to wait for them to remake their order. Made a stop here during our road trip because it was recommended by our Airbnb host. When driving past it, it's definitely hard to miss as restaurant has great character inside and around. When we got there, there was a long line however it went by really fast. There are fans with water spraying to keep guests cool as they wait. Overall food recommendations would be to get anything with the hatch chile in it, I got the burger with pulled pork and hatch Chile and it was GREAT. The pulled pork was tasty and moist and the green chilie gave a nice kick. My friends all got the BBQ combo and enjoyed it while eating warm. About 5 hours later we all open up our left over BBQ and it was VERY salty, to the point that I couldn't even eat my sliced brisket sandwich. So... enjoy it while it's warm would be my recommendation. Presentation wasn't that great, but the Hatch Green Chile Burger with the Potato Wedge Fries was yummy!! The more you ate, the spicier your mouth got, which is definitely to be expected and just the way we like this kind of burger. My husband got his cooked medium, and I got mine well done. Both were very juicy and flavorful. The bun wasn't the greatest, but it held it all together lol. This was the highlight during my trip to New Mexico! I absolutely loved the green chili cheeseburger and it has to be the best in the whole world! When coming here do expect a line outside the front doors but luckily it moves fairly quickly and every now and then one of the employees will come out with free samples! So my daughter just celebrated her birthday and this was her choice where she wanted to go eat and at first I was a lil bit like wow an hour and a half but I remembered reading about their famous Green Chile burger so off we went on our trip, my wife and I, our daughter and youngest son. So both my daughter and wife order the #1's, my wife with green chile corn and the Blackberry Lemonade and my daughter with the Queso fries and a soft drink. My son and I both order The Oinker with queso fries, he orders a cream soda and I order the El Rojo Lemonade. We also order a side of sausage to munch on. So we are seated in the main dining area which is full of cool memorabilia and we can hear the band playing in the next room which was nice. So we munched on the sausage while our food arrived and once it arrived it was time to munch on our food. First off the drinks were awesomely delicious and the Queso fries were da bomb. The girls really enjoyed their burgers and I tried my wife's corn and it was very good. The Oinker was the same Green Chile Cheese Burger the girls had plus some smoked pulled pork they do and it was delicious but it was a big burger.
