The ribs had similar bite and mouth feel as a tender and juicy steak and actually tastes like pork - not just the sauce. The meat tugs off the bone (not pre-boiled) rather than fall off the bone (pre-boiled). And then there was the smoked chicken - coated in homemade spice rub, then slow smoked to tender juicy perfection with skin thin as paper as the fat all melted off. This is some of the best chicken I've ever eaten! The "coup de grace" was the brisket - the holy grail of all meats. I had a small slice of the center part of the brisket, the most tender, juicy, meat full beefy flavours - especially the burnt edges where caramelization is most prominent. Words alone cannot describe it. Then dipped in the chimichurri-like sauce which simply enhanced the experience even more!
