Entering the charming space reminded us of so many lovely bistros in France: the art, the furniture, the draperies. First, the bread...a perfectly chewy French baguette with whipped butter. And then the pate. Heavens! And now I know they sell it to go! Is that carnal knowledge? So I am a gumbo snob. I make a gumbo yaya (caramel shade roux) that is amazing. My daddy, however, made a wild game gumbo with an almost black roux. R Bistro's duck and conecuh gumbo had me looking for shot in the bottom of the bowl. I literally cried because of how close it tasted to my dad's.
