I love finding a new bakery! This place is so cute tucked inside Reps Gym. I love the modern feel with the walk up window, the seating area inside, the photo wall and the black and white theme. My mom ordered a Chocolate Brownie Cheesecake for my birthday and it was a hit! Very creamy and decadent with just the right amount of crunch and tang with the dark chocolate. Every loved it! We also had a cowboy cookie when we picked up the cake, it was pretty good and fresh. Pro tip - Have them warm up the cookie to elevate the experience. They also have cupcakes, scones and coffee. My only suggestion would be to add more drink options like iced tea or lemonade for those hot summer days! Definitely give this place a try and support a local small business. read more

My sister and I were in Pueblo a couple of weeks ago and was referred to this family owned bakery. Oh My Goodness can you say AMAZING!!! When someone hears that it is a bakery that is gluten-free and no refined sugars. All organic with good quality ingredients you start to wonder as my sister did, how it will taste well? Let me tell you it is divine. We tasted the orange cranberry scone and it was delicious. Moist and every flavor hit your tongue like a dance. I walked out with the orange cranberry, apple pie and an almond cherry scone. My sister had her own bag. Hahaha. She was made a believer. Oh my goodness, absolutely delicious. We tried the chile cheese chocolate cupcakes and they were SO GOOD! You can tell they infuse love into everything they do. It's nice to find yummy things made of only pure ingredients. Even their matcha was ceremonial grade. The service was wonderful too. It was nice to be able to order from the window on the sidewalk. I ordered a chocolate chip cookie from the walk-up window to take home. Wish I'd opened the bag and looked at it before I left the bakery. It was small and flat with very few chocolate chips, and seemed burnt. Maybe I just caught them on a bad day, but I was seriously unimpressed and won't be back. We stumbled upon Sweet Ella's on our walking tour of Pueblo. What a find! Gluten-free is becoming more common ... but food this good without gluten, dairy, cane sugar, or GMOs that is organic, and made with real ingredients from scratch?? Sweet Ella's got the corner on that market! Nothing about these treats says they lack anything! Light, fluffy, and taste that exceeds any traditional baked goods is a Herculean effort that pays off with each bite. And the creativity in flavors is tremendous. My husband and I stopped in while in Pueblo. The employee was super helpful and knowledgeable as I am both gluten and dairy free. We ended up splitting a strawberry chocolate cupcake, a cookie sandwich, and a pecan cookie. I loved the cookies and the cupcake was just okay. Also the coffee here was delicious! We came to visit Pueblo, from LA to get to know the area. As we strolled around town we came across this cute place. Their menu is pretty decent and affordable. We ordered 2 chocolate cupcakes (vegan), vanilla cupcake and a chocolate chip cookie. Let me tell you, the chocolate cupcakes were hands down the best cupcakes I've ever had! My god! I am obsessed. I am so pleased to give Ella's Bakery a 5 star review. If you try this place and don't like it, there is something wrong with you not this bakery. Anyone who can cook this healthy and still taste amazing is talented and moreover for them to share their talents is commendable. Just go try the coconut sugar based chocolate/chocolate cupcake. It's flavor is impressive, the science of what they're baking is impressive and the customer service is notable. This gluten free bakery is amazing! We got a bunch of things from them and everything was delicious! The cupcakes were moist and not overly crumbly like some gf baked goods can be. We loved that they have a walk up ordering window since we had our two dogs with us. The service was really great! The woman that helped us even wrote down heating instructions for our muffin and scone since we planned to eat those later. She was very proud of her products, which she should be .
