It also arrived perfectly frozen despite going from NM to FL... in early Sept. I'm pretty sure they even washed my game bags! (They smell fresh so clearly they did). Between how professional the operation looked when I was there to how things came out, I have to say this is probably one of the best if not among the best processors in the country. For entrées, we shared the 14-oz bone-in ribeye and the 8-oz filet, each cooked perfectly to a medium temperature. Both cuts were flavorful, tender, and well prepared. The shareable sides complemented the steaks beautifully: crispy steak fries, a green chile mac and cheese with a nice kick, and tasty sautéed mushrooms. Dessert was a shared crème brûlée, a classic finish to the meal. While we didn't enjoy wine on this visit, both the wine and cocktail menus were inviting and well curated.
