Based on my most recent visit, either that last visit was an outlier or Acapulco is on the upswing again. The menu is standard but there are some goodies to be found and from what I can tell they do the standards well. The salsa is solid and if you're not a cilantro fan it doesn't taste as if that's present. The house-made hot sauce is delicious though--order some and mix it in with the salsa to give it a kick or if you like it really spicy, try it straight. I had the carnitas this time around and they were delicious--slow cooked, flavorful, juicy, simple and straightforward. They served them with fresh soft tortillas so I was able to assemble 3 tacos with fresh pork, guacamole (served on the platter), fresh tomatoes, and some of that house hot sauce. I also added a tamale on the side to see how they did those, and it was a larger tamale than expected but very good and slathered in red sauce AND queso. My dining partner had a very complicated and picky order and they handled her requests perfectly. The service was super-friendly--fast, kind, efficient. They checked on us often (but not overbearingly) and even provided freebies! I mentioned last time it felt like it could use a clean-up and some lighting--this time around, everything was well lit and clean, and the bathrooms were spotless. While I didn't partake, I noticed the happy-hour sign on the way to he rest room and it's ridiculously cheap ($3 mugs of import beer, 2 for 1 margaritas, $4 tequila sunrise, etc.).

The jackfruit taco was tasty and had a great texture to it--an acceptable meat substitute that isn't trying to be something it's not. The fish taco was well seasoned and the Cajun mayo added a kick. The jerk chicken taco was pleasantly spicy with a ton of flavor. The island chicken taco wasn't my thing--it was too sweet for me. We also got the guacamole and chips. The chips are not homemade, but still salty and simple. The guacamole could use a little seasoning, but it's chunky and refreshing. Menu also offers tacos with shrimp and a black power taco, which is a vegan taco made with black beans. Overall this food truck has a lot of potential. I do think things could be improved, however. Whenever we order, we always wait at least 25-30 minutes. That in itself isn't the issue--it's more due to the fact several people will come up after we've ordered, get their orders, and leave, while we are still waiting. This could be because whatever we ordered is still being prepped, but seems more due to lack of organization. Same goes for their schedule--if we had a little more notice and the schedule was posted with regularity, we would eat there more often. Regardless, I support this business and would continue to try their tasty tacos.
