I'll start by saying the food is great. At least what I've had is. It lost a star for time and friendliness. I've gone multiple times now, once just for chips, queso and a tea. They take what feels like forever no matter what you order. For the above order there was no line and only a few people sitting at tables. It took them nearly 45 min. Maybe they had to melt some cheese. That's the only thing I can figure since I watched as everyone who came in and sat down after me got chips and salsa immediately. I ordered 4 potatoe egg and cheese breakfast tacos the time before and it took almost an hour. For their regulars, they are all smiles. For everyone else they frowned at them, me included and look at me like I am an idiot for perhaps not ordering ahead. Moral of the story, if you're not eating there; order ahead!

They have enough class to put their logo on each table.

My daughter and I were in Mathis for a wedding and we had stayed overnight at a hotel in town. We had run into the Mathis H-E-B to get some things and asked some one "local" the best place in town for brunchy food. He quickly said Taqueria Vallarta. Locals usually know the best places to eat and I love Mexican food morning, noon, and night. Taqueria Vallarta serves Jalisco style Mexican food to be honest I've got to educate myself on Jalisco because its delicious. This little restaurant was packed but smelled so good when we walked in. There wasn't a clean empty table but the waitress said they had just been slammed with their morning rush and she quickly cleaned a table for us, brought us chips and salsa. I'm a salsa fanatic and usually will not come back to a place with terrible salsa. It really had great flavor. The menu had so many great options to choose from nothing overly priced. I ordered the Lady Plate it was just over $5 but had plenty to offer - cheese enchiladas, a hearty chalupa and a crispy taco. My food was fresh and full of flavor the tortillas were the best. So good! I just drank water so I cannot comment on any other beverages. My daughter ordered a torta with I believe barbacoa, which she said was the best she'd had in a long time. The waitress was very attentive and checked on us not to terribly bad about bugging us as we enjoyed our food. As we sat there the atmosphere was amazing. The staff was busy helping customers and getting their restaurant back in order they were very quick about it. If I ever have the opportunity to be in the vicinity of Mathis I would definitely stop in.

Anyone that reads my reviews, knows that I have a criteria that you must meet when it comes to Mexican food in order to garner a five star review. This restaurant was a unique find a night trip back from Corpus Christi on a late Sunday evening when everything else was closed. The chips and salsa are very good the restaurant itself is older but clean the wait staff was very attentive and the menu has many choices. I noticed a couple downers had hamburgers and they look good but I'll stick to what I feel is their best asset I ordered the everything plate. For $7.29 you get a delicious enchilada a very substantial Chalupa or tostada whatever you'd like to call it, a highly seasoned, taco rice and beans plus guacamole. That my friends is the difference between a four-star restaurant in a five-star restaurant. I said it many times before and I'll say it again if you're charging more than eight dollars for a combination plate of Mexican food you have price yourself out of the competition. The food was all very good. I also had a small bowl of Menudo. Enjoy

Want GREAT, Cheap Mexican Food?!? 5 Stars All the WAY!!! Stopped by on a road trip back from South Padre Island and I gotta say, this place has Hands-Down the Best Mexican food that I've had in a long time! Skip the buffet...the plates are BIG!! The individual tacos are HUGH! They don't skimp out either, the tacos were Loaded Full! Plus everything is homemade from the tortillas to the hot sauce. SIMPLY AMAAAAZZZZED how DELICIOUS everything was!! And Low Prices. I'm gonna make it a new habit to stop by here Every time we go the coast!!

Food not really seasoned and the fajitas was more veggies than meat. Definitely needs some improvement.

This place came HIGHLY recommended to us from my family. They said this is where you get authentic…read moreMexican cuisine. As a vegan, that made me excited because actual Mexican food usually has less cheese and can be made vegan. The business is quaint. There was a friendly hostess to welcome us in and our server was very hospitable. We ordered the chile relleno without cheese, zucchini in pasilla pepper sauce, and mole verde off the vegetarian options on the menu. We also enjoyed guacamole and chips. Our server was happy to accommodate our vegan modifications and it was really easy to communicate with him. The flavors are just WOW! Hands down the best guacamole of my life. The sauces are vibrant and rich. Everything tasted so fresh. And the prices for this quality of food cannot be beat. My husband and I literally licked sauce off the plates to make sure we did not miss one ounce of that authentic Mexican flavor. This place is top of our list of businesses to visit next time we are in town visiting family. We had an incredible experience and cannot wait to continue to explore the vegetarian menu options.

Highly Rated, But Unfortunately Not For Us…read more My mom and I are in Corpus Christi for a little girls' weekend, and after seeing how highly rated Guajillo's On the Island is, we decided we had to give it a try. It was conveniently located near us, so it seemed like the perfect spot for lunch. When you walk in, you immediately get an old-school, homey feel. It's a small restaurant and definitely has that "this place has been around for a while" kind of charm. We went on a Monday afternoon, so it was pretty quiet and we were seated and greeted quickly. Our server was friendly and attentive throughout our visit. We started with the complimentary chips and salsa. The red salsa was delicious--great flavor with just the right amount of spice. Unfortunately, the chips were a miss for me. They tasted like they had been fried more than once and had a slightly burnt flavor. For lunch, I ordered the green enchiladas, while my mom got the chilaquiles verdes. Unfortunately, this is where the meal really fell short for me. The food came out quickly, but the texture made it seem like our dishes had been reheated rather than freshly prepared. My enchiladas had good flavor, but the tortillas were extremely soggy, which really took away from the dish. The rice was also more of a steamed-style rice than the traditional Mexican rice I was expecting. The refried beans, however, were probably my favorite part of the meal. They had great flavor, a little bit of spice, and were honestly very good. My mom's chilaquiles had the same issue with the chips. The chips were already on the softer side, and once covered in the green sauce, they became very mushy. She also had the beans, which she enjoyed. I really wanted to love this place because of all the great reviews, and I'm glad we gave it a try. But for me, the biggest disappointment was the lack of freshness and the texture of the food. I don't mind a small, casual restaurant at all--in fact, I really liked the cozy, old-school atmosphere--but I do expect my food to taste freshly prepared. Maybe we caught them on an off day, because clearly a lot of people absolutely love Guajillo's, and it has some very loyal fans. Unfortunately, based on our experience, I don't think I would return. Still, it was fun getting to try another spot on the Island during our girls' weekend!
