I arrived 20 or so minutes before closing. There were two ladies ahead of me. The gal at the counter (didn't catch her name) let me know they knew I was there and didn't forget me [this is HUGE... I have straight up walked away from a LOT of places by just the lack of acknowledgement of my presence]. When it was my turn, both her and the cheese connoisseur (I think his name was Justin?) were extremely helpful . Justin even gave me a slice of the new cheese I was trying (& a grape) which was super nice! I felt as though they both were super attentive and helpful (even though they were about to close). Wow! A cheese monger in little D... nothing but the best. The cicerone working this spot really knows his stuff! Share your flavors you like, how big your party will be and he'll craft something sure to tickle your taste buds. There is even some small seating available in the shop. I came here because I have been craving a cheese board and I'm so glad I did! The man behind the counter was quite helpful and patient with explaining their process. I ordered a board to go with 3 cheeses and 2 meats with which they paired nuts, bread, jam, and apricots. After giving him a short rundown of what I liked he helped pick the final selections. Each one was just delicious and I tried a few things I never had before, like duck prosciutto. I spent more than I meant to which is probably very easy to do in this place but I have zero regrets about that because I really did enjoy the board and my fiancé loved it as well. I've never bought a cheese tray before and wanted to try it for my birthday. They were very patient, helped us figure out what we wanted, and put together a nice selection for us. They make the jams and seasoned nuts themselves and you can buy them also! The entire experience was great fun, and it was very reasonably priced even when I bought extra cheese to take home. This would be a lovely idea for a date night as well. I'd highly recommend it. On Wednesdays they do a grilled cheese day! On other days you cannot order a grilled cheese, so plan ahead. read more

Sorry about posting the first two reviews, but last night I wasn't able to check in and report on their first cheese and beer pairing. Justin and Brickle did a great job of presenting five courses of cheese with five paired beers. One course also featured some charcuterie that was just amazing, paired with their house made mustard. The dessert featured Maredsous 8, and amazing Belgian bruin beer and veggies that Brickle pickled. The sell Brickles Pickles, and they are worth picking up. As wonderful as the cheeses and meats were the accoutrements. Justin, the owner, is pretty much the only person I know who uses that term. And the only one who uses it with a straight face. In this case, it meant nuts that were enhanced. Some were sugar coated, some had flavors added, some were roasted, some were paired (the word "paired" is used a lot here) with dried fruits, or ginger. My only dissapointment was that they don't sell the accoutrements on their own. If you see an announcement of one of their pairing events, go. They have very few seats, so book your seats as soon as you see the annoouncement or we'll probably have your seats before you make up your mind. read more

Riding in the car with my husband and I just randomly started thinking about how good every single cheese I had from here so far is! We stopped by on a whim a few weeks ago and asked for 5 cheeses that suited the various tastes we noted. My favorite cheese is manchego aged over a year or more, the drier, nuttier and brittle the better. So anything like that was pretty much what we wanted. The guy who helped us gave us 5 amazing cheeses that were TO DIE FOR. I'd eat all of them every single day. When I go back I'll get the names of them again and update this review. We also purchased a bottle of wine and a sandwich that we both great as well. read more

Upon entering the restaurant, we heard a man sneeze loudly. It was the bald man in a red shirt behind the counter who was preparing the cheese. He was not wearing gloves nor a mask, and sneezed again, twice, while still handling food and without covering his mouth and nose. This is obviously poor food handling protocol. We did not stay to eat because I was too grossed out, so I can't speak to the quality of the food. Would not recommend this place. read more

I came in with my father and partner a few weeks ago, because I heard a lot of great things about this place and I was excited to try it and show my family. Which is why I was so disappointed when we were completely ignored by the two employees in the store. We came in during the day on a Sunday and the shop was completely empty save one other patron. The menu board was mostly empty and we were unsure what the process was. We stood around for several minutes confused, continued to be ignored. We didn't know what to do, and no one was interested in helping us, so we left and ended up going to barley and board instead. Such a shame, I was really looking forward to a new experience at a local business. It's pretty unlikely we'll be back. read more

We have been here several times and really enjoy the cheese experience. Their cheese boards with bread and accoutrements are phenomenal. The cheese is such high quality and they have many exquisite flavors. Brickles pickles are the best and Benjamin's nut creations are truly delicious. This place is a great find in Denton! They had a great selection of cheese, meat, and various pickled veggies. The owner, Justin, was very helpful and had a lot of suggestions on the cheeses. He also didn't suggest the most expensive options, he gave me exactly what I was asking for! The space had indoor seating and would be great for a small group of people. For those not into cheese boards they also had grilled cheese. These were not your average grilled cheese, they were made with high quality cheese and were delicious. I called last night told them what kind of wines i liked and asked if they could put something together for me to pick up today. Super helpful and friendly over the phone. I get there today, still super friendly. Got 4 different cheeses, some homemade jam and a bottle of the extra dry rose. I was worried, im not usually a fan of dry wine (i like sweet stuff) but paired with the cheeses it is delicious! My favorite cheese out of the bunch was the moliterno al tartufo. Our first time here: We ordered 2 grilled cheese sandwhiches (one an English cheese with mustard seed, another with a creamy cheddar) and a beer and the pickle board selection to go with them. Our sandwhiches were delicious, and we would have bought several jars of the pickles but sadly they had sold out. LOVE THIS PLACE. Such a hidden gem located under the adagio apartments. I'm a huge cheese and wine fan, so I was glad when I saw a new cheese shop open up. The people behind the counter are so friendly and helpful. If you need help choose a cheese they will let you sample certain ones and make suggestions based off your preferences. Mostly I like to come here and get cheeses to take home with me and create my own cheese boards, but they will also do wine pairing in house.
