I tried their midnight moon, ballerina, smoke, Beemster and honeybee. I ended up purchasing two 1/4 of each of the harder cheeses (Midnight moon, Beemster and Honey Bee) $46.86. The ballerina and smoked is a softer cheese and doesn't have as much flavor as the midnight moon. The midnight moon has the most defined flavor out of all that I tried today. More expensive than I would have liked, but fantastic that you can try many of them. The female staffer was more knowledgeable about the cheeses than the younger male staffer, he was nice to work with. She was just as nice.
