Through pure happenstance, we were the only two people there that night, so we got a great, up-close-and-personal cooking lesson that I haven't ever heard of before. He taught us about the right way to cut things and how to balance spices not just in each component of the dish, but how to play the components off each other. He put on some tunes and he didn't even mind me watching him work. He explained that he was making a New Orleans style meal for us and I got so excited. Could he pull it off? I worked in a New Orleans/Cajun style restaurant for about 5 years and I know that you can't fake the funk. The meal was amazing. We started with some perfectly prepared cheese grits with an interesting twist. He added an egg to it and I couldn't believe what I was tasting. The texture was perfect and the egg gave it an very pleasing consistency. The starter was enough for a meal but he went on to prepare a moist chicken quarter perfectly baked and topped with an AUTHENTIC sausage gumbo. I've always had the chicken lumped in with the gumbo and never would have thought to do something like that. I was absolutely fabulous. So fabulous that my daughter (who only eats chicken nuggets) tried it and enjoyed it! If that wasn't enough he made homemade fried beignets! I asked that he not give us tons of processed sugar (my wife is in her second trimester and sugar has been making her notoriously sick). To my surprise he gave us a choice of pure agave, and honey! Id come here just for the soup! Bad part is the pozole is only made on weekends. They have a salsa bar too. They have 6 different types of made salsas and veggies to add if you want.
