I won't recite the litany of dishes that he prepared, but I must comment on the care he put into each one, balancing the flavors and textures within and across the prix fixe menu. Cuts were tender and were often unfamiliar to me, as an American diner. Even when we revisited certain fish in later dishes, they were presented in altered forms to make them new again.
