I won't recite the litany of dishes that he prepared, but I must comment on the care he put into each one, balancing the flavors and textures within and across the prix fixe menu. Cuts were tender and were often unfamiliar to me, as an American diner. Even when we revisited certain fish in later dishes, they were presented in altered forms to make them new again. First things first, paying over $20 for a single sushi roll is one of my least favorite dining experiences out there. With restaurants charging a little more for an all you can eat experience or even doing buy one get one deals, the sushi roll has to be really, really good to make it worth it. I did not feel that way here at Ko Fusion. In fact, I felt that Flaming Phoenix Roll was good at best and when I finished, I was still starving. I do think there is an effort to import quality ingredients and do a nice job with presentation, but I was definitely not satisfied.
