It's so nice to have such an upscale restaurant in Darby. The food was very good and so was the service.

Had an incredible dinner (and view) last night! One of the best fine dining" spots we've been to in the Bitterroot. We had the lamb pot pie (fell off the bone melt in your mouth!) and the tenderloin (probably top steak we've had in the bitterroot). Service was impeccable, cozy atmosphere inside, and incredible patio which also allowed pups at the picnic tables! Tammy was our server and was exceptional. read more

They nailed it! You will find a diverse menu with many choices from steaks and chops, pasta, trout, salads and the best burger you will ever have. The atmosphere is elegant and casual at the same time nodding to the Montana style. The staff is professional yet friendly, and the owners exhibit a non intense presence in both the front and back of the house. They make a point to stop by your table and see how things are. The meals are fairly priced and plentiful. The bar is crafty, well stocked, wine too and has a great vibe to it. We sometimes dine at the bar. read more

Reservations are a must most nights. Food was excellent and staff are very friendly. Beautiful new restaurant with amazing views. I suggest that all staff taste everything the restaurant has to offer. Several of them had not tasted everything offered on the menu, but this could be because they are a very new restaurant. Still, the staff needs to know everything about all dishes, including taste. Food presentation was amazing. Very beautifully done. Just a bit of a wait between courses, so be patient. A great evening. The Sangria was outstanding. The Brie appetizer was delicious. I had the beet salad which was outstanding. My hubby had the ribeye steak and it was tender and delicious. I had the trout. I would rate that as a 3. Not much taste. We all had the vanilla crème brûlée for desert and it was one of the creamiest and most flavorful I've ever had. Service was very good. Idk where to start.... Had a reservation made weeks in advance and when we got there at 4 we were walked through the restaurant, past the patio to a few picnic tables outside in the sun. It was almost 90 degrees and there was no shade, no effort to even make it look like they tried to have a table ready for us. Keep in mind it's 4 and maybe the hottest part of the day and early enough to beat the dinner rush. We had several people in their 70's in our party and sitting in the sun and paying $50+ per person to dine is absurd. Restaurant wasn't even half full even after a hour of us being there keep in mind. Server was ok.... Probably could've got our food order sooner. Took our drink order but didn't ask if we wanted appetizers or were ready to order. After 20 minutes we received our drinks and we had to ask if we could order something. Soups, salads and apps came out sporadically. Some salads came as starters even though they were ordered as a meal. Had to ask several times for a refill or another cocktail. Probably would've had a 3rd drink since we were there 2:30 hours but I was never asked. The FOOD! Wow what to say. It's not hard to take the pits out of dates before you wrap them in bacon. Steaks were either under cooked or over cooked, more over than under. Veggies like brussels sprouts, broccolini, and asparagus all basically raw. They were vibrant with color but clearly not cooked enough and were under seasoned. Creamed Brussels was probably the biggest miss for me. Honestly this place had a good atmosphere but the FOOD NEED A LOT OF WORK and so does the FOH and how the handle reservations. *edit they were definitely still date pits in our dates not almonds.... My wife and I had been watching the Sapphire restaurant being built over the year and so it was with anticipation to see this beautiful landmark on the inside and experience the ambiance and food when we stopped by for dinner. We are a spontaneous couple and so we simply stopped by one Friday night and were able to sit at their long, rustic and well-appointed bar. Having previously talked with the owner earlier in the week, I had a glimpse around before actually letting the rustic beauty of the place sink in on our dinner date. Hands down this was the most rewarding dinner experience we have had in our years in the Bitterroot. The bar seemed to be born out of interesting and honest materials and did not feel dark and unfriendly. Quite the contrast, it seemed to be designed and built with rustic beauty and light. The most rewarding was the food and the company, however. We struck up a conversation with a gentleman near us who said he cut the giant slab of tree for the bar top and that just started our experience off on a great note. The ambiance was lively, classy, friendly and not at all pretentious which reflected the menu. We had the crab cakes (outstanding) and being Australian, my wife and I shared the leg of lamb. It blew our mind how tasty it was and how it just melted in our mouths. We could go on and write many more paragraphs, but I would not take our word for it - experience this Sapphire gem for yourselves. Wonderful food, incredible atmosphere. I loved chilling out on the patio in the afternoon sun. Our server Cali, was attentive, professional and easy to talk to. We enjoyed the phyllo-Brie starter followed by the Sapphire cheesesteak and Asian chopped salad. Sweet potato fries could have been hotter. You have something here. It's a nice place with a good atmosphere. I had the lamb. I don't recommend it. It's way too over seasoned but other things looked good and the Brie appetizer was excellent. You're too high end of a restaurant to be charging a dollar for lemonade as a mixer. I ordered a vodka soda with a "splash" of lemonade, not a vodka, lemonade, but a splash of lemonade and got charged for lemonade. It's not the cost it's the principal, that's just dumb. Be better!
