My only complaint is I live over an hour away. I fall in love with cafes easily, but not without very high requirements. A coffee elitist ? Yes. I am. But life can be so unfair, can't it ? There are few things that are more soothing than waking up to a black cup of well-made coffee. I have a thing for pour over--gesha and rare single-origins. They're not always easy to find at a coffee shop. Passenger has some of the best beans and that's what used here. The staff made me a perfect gesha and a beautiful cappuccino. I'm unsure where the pastries are from, but they all looked delicious & I loved the oatmeal cream pie. The cafe has multiple areas of seating for you to yearn, write, read, study, yap in. I'll be back to park myself in that cozy enclave and enjoy 3-4 cuppas. read more

This is quite possibly the best coffee shop I've been to, period. And as a coffee lover (and self proclaimed coffee snob), I have been to a LOT of coffee shops. We ordered 2 cappuccinos with oat milk and a pourover, and everything was ... perfect. The cappuccinos were just the right temperature, the milk was foamed perfectly, and you could actually taste the unique flavor of the coffee beans. The pourover was amazing, and you could tell they took care to brew it properly. We also ordered an earl grey scone and cheddar bread with PB, honey, and banana, and both were delicious. As a bonus, the space is beautiful with plenty of seating, and a parrot that fascinated my toddler. We live about 90 minutes away, but as soon as we left, we started thinking of reasons to go back. read more

First time here, visiting from California. I've been to hundreds of cafes, but this one stands out. Super cool historic spot with so much character. The menu has some great drinks, but the real highlight is the interior; definitely a place for photos or even a full-on photoshoot. If you're artsy-fartsy, this place is paradise. It's also perfect for a date, or just to study or read a book. The staff are super friendly and really know their drinks. They even have a "bird room" with parrots chirping away, which adds to the unique vibe. I ordered the Lumberjack Latte; creamy, spicy, silky and the Tahitian Vanilla Latte, both amazing. ThreeBirds Coffee House is one of the nicest I have ever visited. Before we get to the coffee, let's talk about the surroundings. As soon as you enter the "house," you'll see Victorian era decor, various rooms that are all aesthetically pleasing, eye catching wall art, and customers quietly enjoying everything that I just mentioned. The staff members are cordial, artistic with their barista skills, and answered all of our questions regarding the local sites. The coffee was amazing and was just as good as the charm that this coffee house exudes. The house has a nice outdoor patio, well maintained restrooms, and even a glass enclosed water dispenser...as you enter/exit the home. As we strolled through the home, we came upon a very nice room, which had a few birds. One, which was named, Dorian. He was colorful and we followed the instructions on the cage....played music for him and he enjoyed it. I like three birds but it's not my favorite. The atmosphere and the inside of the coffee house is beautiful and it's a great place to hang out and do any work you may have. It's also in a good location in down town Easton. To me, their coffee is hit or miss. Today, my iced mocha was a miss but other times it's pretty good. Their baked goods are very yummy and consistent. I find some of their staff so nice and polite and other times very rude. Today, i was taking a video of their front area to promote the coffee house and the girl working behind the counter was very rude about it (not the one in the picture with her back turned) and made me feel bad about it as if i was doing something wrong and illegal. I've been going there for years and its a kind of a turn off unfortunately. read more

Ranked the #2 Independent Coffee Shop IN THE NATION by @usatoday AND it's only 15 minutes from me. OF COURSE I'm gonna go! Upon entering, I was taken aback at the eclecticism of the whole place. This room and that room. That nook and this nook. Each with no theme. Contemporary with 19th Century. Live birds. Deer heads. Creepy paintings. Here, there, and everywhere. But then you get to the ordering area and it seems like the smallest coffee shop ever. It's tight with no where for the line to go. It's a Sunday morning so it's PACKED. A makeshift line with ONE cashier. And despite all that chaos, she's the sweetest and makes you seem like you're the only one on line. I had a vegan Gingerbread Muffin & the seasonal Cinnamon Vanilla Chai. Yummmm! The chai, she tells me, is their own curated creation and it was fantastic. Not too strong. Not too sweet. GREAT food but not a good place to relax and unwind as it's people on top of people and because of that, it's LOUD and stuffy. To surmise, the food is AWESOME but get it to go. First time trying and best believe we will be back! It's a great space, with a lot of seating in various rooms. There is a lot of historical items around the coffee house for you to get more involved with what space you're walking into! My wife ordered the cappuccino with oat milk ( no almond milk here) and I got the kombucha, Gojiberry flavor! Once you order they'll call your name when your order is ready, there also the birds mentioned in the name of the business actually in cages near the wheelchair accessible door. This is a gem of a place and once you enter you're transported to the 19th century. The whole first floor of this Victorian home is the coffee shop. You can sit in any of the uniquely designed rooms with quaint leather sofas, to upholstered chairs, to the wooden benches. The views throughout the windows vary and there's even a green room which houses plants and two chatty parrots. The scones we had were fresh and yummy and the highlight was the lavender syrup they had (a seasonal thing) to add onto any drink. We had flay white coffees with a lovely leaf design in ceramic blue coffee cups and plates. I just wish I lived closer to this place!!! It's a museum, home, coffee shop all in one. read more

I love Three Birds coffee house! I visited with friends to get drinks and chat, but I think it could also be a great place to do work. There are a lot nooks and places for people to sit and relax. There are also a lot of plants and they have a bird in one of the rooms. When it's warm out, there's an outdoor seating area you can use too. It is such a cozy and cute coffee shop! I got the hot matcha latte and it was great. I love the latte art and the taste of the matcha. I asked for it to be sweetened but it was just a tad too sweet for me, so keep that in mind. My friend got a hot chocolate and I love the little bear on top. It was such a nice touch! I definitely want to come back again soon and would 100% recommend this place if you're visiting Easton! Update: I came here again to work and tried the Tahitian vanilla latte as well as their apple cinnamon muffin. The latte was delicious and had a very nice vanilla flavor! However, the muffin was extremely disappointing. It was very hard and dry, and IMO, it didn't taste like apple or cinnamon at all. And unfortunately, it was served cold. As for the ambiance, it was pretty difficult finding a quieter place to work. I can at around 1 pm on a weekday and almost all of the quieter spots were taken. One of our favorite unexpected coffee shop finds in the area. Beautiful building w/ history and includes spacious inside and outside seating. On a nice summer day it feels like you're just chilling in someone's peaceful backyard/house. They also have really nice baked goods that have yet to disappoint us. We always get a hunk of cheddar bread with sea salt/butter (so simple but so good)! They also have really flaky and delicious croissants and scones that they warm up for you if you're dining in. Hands down the best croissant I've had in a long time!!!!! It's dense texture , just-the -right- sweetness filling, and almond topping is on point. What a treat!!! The coffee is also delicious! Pricey but well worth it! We ordered a pour-over (10$) which is supposed to have a "hint of honeydew". They had 4 choices for the pour over and they change it daily. The latte (6$) is well balanced. Not too milky and not too bitter! - just the way I like it. I also love that this shop is environmentally conscious. Their coffee cups and lids are biodegradable - I rarely see this in NYC.
