He was excellent at explaining the menu, offering suggestion and really made our dinner memorable. As far as food goes, everything we had exceeded our expectations. The chef here is notably involved in the slow food movement, so the majority of ingredients are locally sourced and organic. Each table received a variety of different breads with two accompanying spreads, one sweet, one savory. We also had one appetizer that was trout three ways and each was completely different from the next. Additionally, we had game sausage two ways, one was just a simple link, the other prepared in a light broth. My dinner consisted of a whole fish (ordered by the gram), roasted parsley potatoes with garlic butter and a huge side salad. The fish was prepared in the "blue" style which was simply broth and herbs, topped with shredded vegetables and a twist of lemon. It was phenomenally simple and truly showed off the flavor of the fish, which our waiter informed us was locally caught from a small, exclusive pond. For Americans, the idea of organic, locally caught is just catching on, so its refreshing for the chef and waiters to know the suppliers and producers of every ingredient which they present. I also tried the rump stake one of my company ordered and it was cooked perfectly. We even received a free dessert which were chilled pieces of dense chocolate cake served on a stick, lollipop style. Even though this was our most expensive dinner in Germany, the prices were more than reasonable for the quality of ingredients and the exceptional service provided.
