    Seeing the open sign on the truck when I get home from work is the highlight of my day. The food is fresh, the burgers are incredible. 10/10

Going in, I was impressed by the story being told, with burgers that seemed to be top quality, made with a combination of Snake River Farms and ground chuck. The fries were lightly fried once in beef tallow, and then fried again when you order them, similar to Belgian style. Everything sounded like they were super thoughtful so I was looking forward to greatness. What I ended up with was, well, "good". This is of course, a bit subjective I guess but while the burger was decent and had a nice bit of pink inside, (also, shout out for the bun they used which was absolutely perfect to be honest), it tasted a bit dense and preformed, so biting into it gave you a bit of a "quarter pounder" taste instead of being super juicy and loose consistency, if that makes sense? The fries were fresh and tasty but perhaps a bit more limp and oily than I would have preferred, as if the oil temp was a bit low? Still, I'm nitpicking because it was still really good but if you're reading between the lines of my review, I think I was expecting something exceptional that you would want to drive out of your way for given the obvious attention to quality that they strive for, and ultimately realized that Just Burgers was, ummm, Just Fine.

However, additional details create a loving connection - its off-Broadway central location, the copper-paneled ceiling that mimics warm conversations in varied spaces (cocktail, chef's counter, expandable tables for groups, and outdoor), fresh, locally-sourced ingredients with service to match. It's the place where I had my first glass of Turley Zinfandel (education alongside), and the place I will always return for my favorite Wagyu Beef Stroganoff (a comfort from home, but upscale). This one delivered with large, firm, expertly seasoned portobello & forest mushrooms over wide, freshly handmade pappardelle pasta that soaks up rich beef stock (a touch of black pepper) blended with crème fraîche. A generous portion of wagyu is tender and rich. PRO TIP: Mix then let it sit & marinade a minute - flavor pays in dividends. For dessert, a Valhrona Chocolate Pudding topped with whip cream and Maldon flake salt - exquisite, but expensive. The texture is comforting and delicious - olive oil adds a lingering finish with slight fruit.

I got (of course) the Proper Burger, and it is honestly a perfectly decent burger. Good sear, well dressed, on a soft yet capable bun. I had a little conflict with the artisinal lettuce, mine was more stems than greens, but I appreciate the intent of using something more interesting than iceberg. My side of onion rings was very nice, crispy batter outside, perfectly sweet and tender onion inside. I'd come back again just for that. Service was attentive and accurate. The dining room here is a rehabilitated automotive garage and still has the roller door ambiance. Enclosed and air conditioned, a little hipster-industrial vibe, but fun. I didn't visit the adjacent beer bar (Proper Brewing Co) which is the raison d'être for this burger joint. From what I hear it's worth the effort. Utah liquor laws are incredibly weird and we all suffer for it, but it does produce some really interesting workarounds.
