    OOooOOOOOoooooooooo…read more....... We discovered this place when we went to the Denver Urban Homesteading farmer's market on Santa Fe last Saturday morning. Not only is their cheese 14 years old and off the HOOK with protein granules and with a pleasing punch and a mild, lingering, sinusy aftertaste, but their ground beef- OUTSTANDING. I'm a vegetarian. I whined when my man chose ground beef- the very words "ground beef" disgust me. But I ate two patties. Kid you not. The texture was perfect (juicy, juicy) and the flavor was unlike anything I've ever had. And all he did to prepare them was to add salt and pepper. This dairy also does raw milk products, but to get these treats you have to become something like a shareholder... it's a complicated, rather spendy system. But if raw milk is your jam, they're the people to talk to.

    We took our nephews to visit the dairy yesterday (they live in Windsor). It was really cool to see…read morea working dairy - they had chickens, sheep, cows (of course) and goats. The goats were a favorite as there were several young ones that weren't much bigger than a lab puppy. So sweet! We weren't sure what to expect. Most of the cows were far away, roaming the 80+ acres of the dairy. We were able to get a mini tour of the dairy behind their storefront and to the side. Would be cool if they posted when the cows were milked so we could have planned, but all in all it was a fun visit. Weather was a bit treacherous so we didn't stay to see the cows being milked but just that they offer this is super cool! A great way to connect how milk, cheese, eggs, etc. get onto our table.
