    Unique brews, great atmosphere, and plenty of seating. If you're looking for a great spot to hang with friends on Mercer look no further. The bartenders always greet ya with a smile and a warm welcome. Food trucks out front are always great. Right now it's black sheep soul (YUM!). This place has the ales to cure what ails you!

    Staycation report! This was our final stop of brewery tour 2022, after visiting 2 other stops, and it was definitely up there! Small and cozy, the beertender was super friendly. Good selection of beer and a few wines available for the non-beer drinker (but who honestly takes that risk!?) Not much else to say other than we'll make this drive out any day!

    I like the logo the beer is ok nothing to crazy been here twice now. For there anniversary it was really crowded. So definitely not meant for big big crowds.

    During my friend's bachelor party, I stopped by the Acopon Brewery for a couple refreshing beers. The brewery has a very pronounced soccer bar atmosphere. The Mary Celeste (English IPA), which we drank, was light and refreshing on a hot summer day. Additionally, for $6, the beer amount was quite generous.

    Acopon was still relatively new when we went a few weeks ago. It's a great space if you're in Dripping and want a microbrewery to stop through. They're dog-friendly (with treats) and have both indoor/outdoor seating. They also had TV that was playing soccer, and strong wifi. I love that they have flight options 4 for $10, as well as pints. It wasn't busy when we stopped through on a Saturday afternoon. They don't have food here, but if you ask the taptender...he'll tell you what food options are nearby. Service was kind and efficient. Their beers were across the board--good. My favorite was their Aine Hefe! It was floral and super crisp for the warm weather after a long hike. They seem to do a lot of English style ales, which aren't my favorite...but you can definitely find options that suit your taste buds. They also give free stickers upon request. BOOM!

    This place has the coolest logo I have ever seen in regards to the various breweries I've been to. They have a really good beer menu and the prices are more than fair! I was actually surprised to see them so decently priced this far out in the hill country. They do provide half pours in their standard sized glasses, just make sure to ask for a half pour when you order. I was happy to see they allow food from the outside as well which makes staying easier as you can bring your snacks in haha. Not on overly crazy amount of seating, but definitely enough for 5-6 medium/large parties. They also seemed to follow the trend of allowing owners to bring their dogs inside which is always cool and fun to see. They also have merchandise for sale and their shirts are super sick...did I mention their logo absolutely rocks!?

    Craft brewing at its finest! This brewery also has a lot of English style beers. Since it was close to closing we decided to split a flight. You can pick any four beers for $10. They are brewing 12 beers on a 3.5 barrel system here so they are busy bees! Their Karnstein was the best amber lager I've tasted. Sooo good! We got these in the flight #8 Barghest English porter, #9 Kobold black lager, #6 Karnstein amber lager, #11 Hans Trapp Bourbon Barrel Imperial Stout (yum). They also have pizza you can order but we were full.

    Porter is interesting because it's not heavy or high abv. I definitely enjoyed it because the flavor was great and it was kind of light.

Since it was our first time there we got 3 beer flights and were satisfied with all of the options we had per our bartender's recommendations! I wish I could remember the guy's name that helped us but I'm sure I'll get it once I go again soon! Ah, it was just such a wonderful time. Super wholesome. Super family friendly. Everyone we encountered both customers and other workers around us were all so delightful too. I know I might say it often, but with this place I reeeally am looking forward to coming back again soon.

Back is big but not as large as the front area. It's almost like being at a giant campground. This is an extremely family-friendly place. Kids are everywhere, especially on Saturday and Sunday afternoons. Big play structure and playground for kids. They have face painting and other kids activities on the weekends. Extremely busy at all times but service doesn't lack. Also, pop-up tents with local artisans selling their wares. Live music on the stage every Saturday. Food menu (we didn't eat). Really decent pours when it comes to craft beer. Shared the salted caramel stout with my boyfriend. Hands down one of the best stouts I've ever had (I fancy myself a stout snob). Even our fur boy, Sir B. gives two paws up (see photos). Bonus: band playing when we were there spied me in an Oasis shirt and did a cover of "Don't Look Back in Anger". Nice job, guys.

I tried a flight and was impressed across the board--especially the IPA and their rotating small-batch brew, which had great balance and depth without being too heavy. They're clearly doing more than just cranking out the basics here; there's real thought in the brewing. The food truck on site is a big bonus. I had the pulled pork sandwich with fries--absolutely hit the spot. Great portions, flavorful, and a perfect match for a cold pint on a warm day. What really sets Bell Springs apart, though, is the atmosphere. It's family-friendly, dog-friendly, and totally unpretentious. You're as likely to see a group of locals playing cards as you are a couple sharing a bottle from the winery next door. If you're looking for a casual, beautiful spot to enjoy craft beer, good food, and good company, Bell Springs Brewing should be on your list. There's just so much available. Even with a lot of people in attendance, the amount of land allows for quieter areas should you choose so. The open fields have trees for shading as well. A couple of bathrooms across the property make it so you don't have to walk far from wherever you're located. I personally love the vintage Airstream converted to a bathroom. Well two actually, the Airstream has a men's and women's room. The covered patios are also large and have a dance hall vibe. Live music and deejays perform from under the covered patios. Food truck onsite (their own) & pizzas are made onsite too. The food looked really good though we didn't try any. We shared two pours (2-half pours) that were amazing. One was a sour which I don't normally like. This one, I liked. The table beer was perfectly refreshing on a hot summer day. Also had a hibiscus mint iced tea=yum. The beers are so special. Like the best of the best in craft beer world. Beers are made with water from their well and native wild yeast. The grains are locally sourced and certified organic. Other ingredients like fruit, herbs, etc. all come from Hill Country. You can absolutely taste the difference. Fantastic products and visit. Note: Because it's in the country and off the beaten path, the roads and parking lots aren't the best. Dusty with lots of rocks and deep holes. Be careful not to drive more than 5 mph.

N/A options also available. Helles on Wheels is a German lager (oh yes it is) that's light and refreshing. The Hero is also an amazing pour. I'm a huge fan of Hefeweizen and this is one of the best I've ever had. The McGregor actually really reminds me of Ireland. Like a beer you'd find in a quaint village and wish you could take it home with you. Lots of others that we need to get back and try out. Welcoming and fun place.

She suggested we go by One Shot Distillery and Brewery because of its character and uniqueness. Sometimes life is more fantastical than reality. There was a Bible Study group finishing up their bible study at One Shot Distillery. One of their member said they study the holy spirit and then they have spirits afterwards. I found some degree of irony in that situation. They did share some of their birthday cake, which was quite nice. One Shot Distillery emanates Texas pride with their huge colored Texas flag painted on the exterior the building. The place is relatively small but with a lot of heart. Samantha, the bartender, was Texas friendly and beaming with helpfulness. She even provided a hill country wine, distillery and brewery map...so super kind of her. One Shot has in‑house craft beers that are brewed with a focus on traditional German‑style profiles.. They have a working distillery with gin being one of the spirits they are known for. One Shot Distillery sources from Australia their Tasmanian Leatherwood honey, which is used as a botanical in their gin.
