The person that told me about the cafe said it used to be Amy and Cathy's. I tried it because I need a quick lunch before a 1:00 meeting. The location is down town Seguin near the courthouse but if you didn't know it was there it may be hard to find. It is A small quaint sandwich shop. Very friendly staff and a simple menu. I offer the Chicken Bacon and Cheese Sandwich with honey mustard instead of the craft mayo that it came with. I was a little disappointed because I assumed it was going to be a chicken breast with slices of bacon. ( I should have read the description). However it was a combination of diced chicken, onions, and diced bacon, smothered in melted cheese. It was actually a great sandwich!! The flavor was good and it was quite satisfying. For a little history, that particular casserole emerged in the 1950s as a convenient, post-World War II Tex-Mex comfort food. Despite its name, it has no actual ties to Texas's famous King Ranch; instead, it is a creative, canned-soup-based casserole inspired by the Mexican dish chilaquiles. I am ususally underwhelmed by macaroni and cheese but this was the best. The macaroni shape was unusual and the closest I could find online was called "Radiator" because the similarity in shape to a radiator. It held the sauce perfectly though.
