Then I somehow stumbled across Rebel Catering on Google. They had a wide variety of packages for food varying from Asian, to bbq, to Mexican. They didn't have a ton of reviews, and it seemed like they mostly did corporate events, but I gave them a call. I'll be honest, I was a bit apprehensive of how incredibly chill Rahul is at first (because I was already stressed out), but when I told him about our vision, he immediately checked with his chefs and created an incredible menu for us. My mom and mother in law's primary request was copycats of the other restaurant's corn fritters, and he even delivered on that. I'll attach a picture of the menu, but our minds were blown at the quality and freshness of the food. Buffet style brisket is HARD and he and his team crushed it. Part of Rebel Catering is their shaved ice package with alcoholic shaved ice (TABC bartender included). They had custom flavors to match our Asian fusion theme, and even brought their truck in to serve our guests! We had wanted to stay away from the typical meals you find at weddings, and gravitated toward comfort food incorporated with upscale dining. After speaking to her about the types of restaurants and foods we like, she set up a tasting for us and our parents with what we had come up with. She hit the nail on the head with every morsel! There was a selection of appetizers, main dishes and sides to choose from, as well as a refreshing non-alcoholic watermelon juice drink. Everything was phenomenal! We ended up choosing a tuna tartare, open-faced duck taco, and goat cheese tartlet for our cocktail reception appetizers--all super yummy! We also had a mac and cheese station, with truffles as an option to add, which we thoroughly enjoyed!
