It's not just the time--it's the absence of rhythm. There's no visible flow, no sense that orders are moving forward with purpose. That's compounded by the physical layout: the counter is set back far enough that you can't really see what's happening. Instead of transparency and anticipation, you're left standing there, disconnected, waiting without context. Then there's the food itself. The sandwiches land squarely in the "fine, but forgettable" category. Hot sandwiches, in particular, miss the mark--more like something that sat a little too long than something freshly made. Think lukewarm bread with onions that feel more tired than grilled. Nothing is outright bad, but nothing stands out either. The atmosphere doesn't help. The energy behind the counter is low--no urgency, no enthusiasm, no sense that the team is driving toward anything. It feels static. In a space like this, momentum matters. Even average food can feel better when it's delivered with speed and intention. Here, that spark is missing. In the end, Potbelly has the right idea and the right price point--but without tightening up efficiency, improving visibility, and bringing some life back into the service, it struggles to deliver on what should be a straightforward win

Once inside, the restaurant was beautiful. We felt like we had fallen through a wormhole/backroom and were in another city, like Salt Lake or Park City. And then, they were playing the Beach Boys. We arrived at 4:30pm and were told that they didn't open for dinner until 5pm, but we could wait at the bar. We opted to wait and look over the menu. (Maybe consider updating your hours on Yelp to separate dining and tasting hours.) At 5pm we approached the host stand again, they asked if we had a reservation. When we said no, they had to discuss amongst the other staff. They came back and told us we could have a table as long as we finished before the table's 7pm reservation arrived. We assured them we would be done before 7pm and were seated. It felt awkward. It would have been great to know they were fully booked before we waited 30 minutes. The servers were both very good, but nothing like you get at upscale SLC restaurants. These were young adults doing their best, but not the professional waiters you get at elite restaurants. The food was all delicious. My husband's well-done steak was perfectly cooked and still moist. He commented that my steak is just as good and his fries tasted identical to McDonald's. He skipped the fries, but we took them home and our teen who liked them. The focaccia was soft and warm and served with pretty salted butter. The lobster mac and cheese smelled fishy, but tasted good. The sea bass tipped over as the waiter served it, but I didn't mind. It was delicious and perfectly cooked. The spinach and beurre blanc were a nice accompaniment. Our glasses were never empty, but they were not kept full like they do at most upscale restaurants. Not sure if we will go back. The food was good, but overall it felt overpriced for the food experience and level of service.

Biggest complaint is the brice - grossly overpriced for the quality of food. Making burgers with odd-ball ingredients doesn't make it gourmet - just weird. This place needs to step up its game an focus on quality food, not just weird burgers..
