They trim all the fat at my request. Although, my wife likes extra fat, but it's not healthy. The brisket is to die for and it melts in your mouth. My wife loves the rotisserie chicken - she orders 4 for the week. All for herself, of course. They deliver right to your door so there is no need to drive to the Northeast. My wife doesn't like to venture far from the Main Line unless it's Rittenhouse Square, NY or a vacation. All in all, this is a fantastic kosher butcher. Great food, great butchers, great style and great staff. And, they deliver to the Main Line with a whole-hearted smile. When they arrive, they are so nice! I usually speak to them for about 30 minutes about next week's delivery. Best of all, my grandkids love their meat! The delivery driver knows all thirteen by name and seems to really like the kids, which means the world to me. Of course, I always give them a really good tip so he may have a conflict of interest. At first, I was just happy to see some interesting and useful veggies and delicacies (Italian, Spanish and other nationalities). But, as I went to the rear of the store, I saw an old fashioned, honest to goodness butcher. There wasn't a ton of stuff in the case, like my former big Italian Butcher shop in NYC, but as we chatted I was to be pleasantly surprised. They were very accommodating. They are even going to get in some whole dried hot chili peppers I have been looking for. I was told by Fabio, the butcher, that they make their own sausage and other items, without chemicals or additives. I asked if there was any possibility of getting a cut of pork neck meat that I used to get in NYC that cooked up like veal cutlets. He brought out some neck meat, and we could see it was too narrow. I asked if it was possible it had been butterflied. He tried it, and it was exactly what I was looking for! So I got my 5 cutlets, the price was great, and was I elated. (Whenever I cooked them, people always said they were the best veal cutlets they ever had because they were so moist and have no grizzle. Of course, I would fess up eventually, lol.) I asked if he might be able to make stuffed veal roasts and other types of roasts, and chicken rollatini. He said he could make whatever I wanted!! He told me if he didn't already know how, that If I told him what I wanted he would either do what I suggested, or research how it should be done. I struck pay dirt with this place! There was some nicely marbled rib eye temptingly displayed right in front of me, that I eventually decided to take. Heck, I was sitting there looking at it the whole time, and it was only $6.99 a lb. He trimmed it as I asked before weighing, and cut it to the thickness I asked for. Of course, like any butcher, they have all sorts of goodies in the back. I will absolutely be back... I can't believe I didn't know the place was there. They've been open 7 months. You gotta try this place.

I was looking forward to "the Hungarian sausage master" Jozsef Hirs' brief return to the Hungarian Christmas Market in New Brunswick NJ earlier this December, but due to their popularity and loyal area fan base (not only was there a long line throughout the day, as they were by FAR the most popular merchant, but I'm told a line had already formed a half hour before the market even opened!), the products we came for - I live for their applewood smoked bacon - were unfortunately already sold out by early afternoon. We had to be content with another type of bacon and some semi-dried salami. Anyway, Florida, enjoy your traditional home-crafted pork products and kolbász. The Garden State's loss is the Sunshine State's gain! They do still deliver nationwide, however, and may make the occasional special appearance back up the east coast, so watch this space.
