They weren't the fall-off-the-bone tender ribs you might crave. The absolute star of the show, however, was the jalapeño and cheddar sausage. This homemade, double-grind sausage was perfectly seasoned and had a great blend of cheese and jalapeño mixed in. The casing had the perfect snap and was top-notch. The sides were equally impressive. The Maque-Choux (like a Cajun street corn) had a delightful char on the corn kernels and a perfect level of spice with a hint of red pepper. The pit beans were a classic, complementary side that made you feel like you were eating around a campfire, especially with the addition of some tender brisket mixed in. So the process is you stand in line the proteins are offered first which looked wonderful early in the morning. We got brisket, ribs, boudin and potato salad and a roll. The following are mine and my husband's opinion: The brisket is nice tender and smoky, the ribs are the star of the show as they are tender on the bone and eat with ease. The boudin is just ok. The $2.00 roll lacks in flavor and was not moist, too expensive for just an ordinary roll. The Friday we went they were out of beer. Parking is street or lot parking. The dining area is large. The friendliest person working is the pit master. Redbird BBQ is a nice BBQ place to try if in the area.
