Made reservations via their website. Place was 70% full Tuesday at 8PM but by 9PM was 20% full. Got 2 cocktails to start but the website does not show their current list of cocktails so I can't recall which ones we got ($20/each). We tried the $140/person tasting menu. Waiter was nice and asked if we wanted more time between courses, how the food was, refilling water. Sparking water adds $7 to the bill as you get an entire bottle of Perrier which is Not made clear when they ask you as soon as you sit down 'sparking or flat water?'. 1 slice fresh bread to start. #1 Tuna/tomato: I did not like but boyfriend gave 10/10 score. #2 carrot was fine but did not feel that exciting. #3 beef tartar, tasted fine, taste was as expected. #4 chawanmushi, loved the soft custard at the bottom. Really dislikes the lobster foam on top, makes it stink and I had a hard time getting past such a potent smell. Loved the guanciale. #5 ?tiny ravioli, tasted fine, sauce was very light/bland. #6 quail, 10/10, both types of quail were perfectly cooked and delicious, sauce was good too. #7 cucumber/yogurt/ice cream, 12/10 best dessert I had all trip. #8 chocolate chou, 10/10 very chocolatey and super sweet. Very attentive, professional, and kind service. There are several wines by the glass made in Quebec as well as a number of other origins. The food was very tasty but not overly remarkably memorable. The flavor combinations were interesting and creative but each dish lacked a tiny aspect to be really outstanding whether it be texture or complexity but this is from someone who eats highly sophisticated food frequently so take it with a grain of salt. We made reservations at Bouillon Bilk ln the same day on a weekday and we are so happy we went! The interior is dim so if you have poor eyesight, you might need to use your phone for it's brightness. The menu says 8 course is from 8pm onwards but we were told that because it's a weekday and not too busy, we could do the 8 courses. The appetizers were delicious and made us very excited for the mains. The cod was so good and flakey. It was cooked perfectly and the flavors were amazing. The lamb was my husband's favorite. The duck is duck breast and a duck heart. I've never seen duck heart served in a restaurant before so that was very interesting. It was actually more tender than the duck breast! The green apple dessert was tart and definitely a palate cleanser. The pear dessert's sorbet component was a big hit. It was light and full of pear flavor. Could not have been happier with our first night dinner in Montreal. This place, while intimate in downtown Montreal off St. Catherine Street, rocks loudly with their offerings! I opted for order their tasting menu, while my friend opted for ala carte, which was suits her better so she was not stuck with the tartare(she does not do raw meat). The tasting menu was excellent for and while every course was just as excellent as the next, I did have a couple of favorites and could eat again at same setting. First course really did it for me and my fav was very refreshing first course crab, and as each of the courses come I feel even happier. The veal tartare was so smooth for the second course, followed by the al dente but very tasty agnoloti, which was my second fav. Though every course did fare in comparison, the progression was on point! When the beef came which was very tender-I was pretty full by then even despite the tasting portions. Just that cumulatively was slightly overwhelming especially with wine pairings, in 2 hrs & 15 minutes time slot! Service was professional and showed a symbiotic teamwork among the different roles. The server delivering the dishes was knowledgeable and provided description of the dish to what emulsion or foam added for even greater flavor! Happened upon this place right along St Laurent on my way to the open park where MUTEK was playing one of their music experiences. I wanted a nice dinner and I sat at an open space at the bar. It was a little bit boujee, but I really enjoyed this! A nice glass of wine, the bartender was very proper and when I asked what was light yet representative of the place, he suggested the linguini with normandy shrimp, he said it was very nice. It's more like angel hair, but maybe that's what linguini is in Montreal? And the dish with the sauce and the little shrimps were so perfect - I really enjoyed the entire experience! New review of their new location on St Catherine! The new space is very beautiful, tall ceilings. Very open airy space, a little dark but goes with the ambiance. They offer tasting menus (5 or 8 courses) as well as a La carte. As it was a special celebration, we went with the 5 course tasting menu. Just a note, the 8 courses are only available after 8 PM. The food was beautifully plated and extremely tasty! Also we were all shocked with the size of the plates. With some other restaurants, their testing menu plates can be pretty small. But here, they were generous! We definitely did not leave hungry! The lamb filled cappellini was so good, it came with mushrooms which my boyfriend hates. But he actually loved these ones which is saying A LOT! The duck was super flavorful and tender. The sauce was amazing! I am missing the picture of the dessert, which was squash-based. Standard Asian compliment for dessert: not too sweet! Lots of different texture elements making it a real treat. The service was excellent. Very attentive and polite! It was a pleasure. This was one of the best food experiences I've ever had. The decor is quite simple although elegant. The staff were friendly and service relatively quick. We came here for an early dinner and got the 5 course tasting menu. The two appetizers were two of the best dishes I've had recently in fine dining establishments, including many Michelin meals. 1. Kampachi with poblano, asian pear, daikon: I like to have a little taste of the ingredients separately before combine them into a cohesive bite. I was a little hesitant because the foam was quite spicy and the fish wasn't very exciting. When I combined all the ingredients I was blown away. The sweetness from the pear and the heat from the poblano melded together. It was all at once intriguing and pulling you back for another bite, while also being soothing in flavor. 2. Beef tartare with almonds and zataar (cherry omitted due to food allergy). Again I tried all the ingredients separately. I wasn't sure how to approach this dish due to the large chip on top with zataar and sauce. I'm also not a huge fan of beef so I was a little skeptical. The chip with zataar itself has very little flavor but when I combined it with the beef underneath, it felt like something was unlocked. The textures - soft and crunchy. It was fruity and savory with an additional layer of flavor from the zataar chip that I haven't worked out how to describe. Again, it was surprising and kept me watching to go back for more to figure out exactly what I was experiencing, but also comforting and familiar. 3. Linguine with shrimp, truffle, green peas. This was seasoned a little heavier than the previous 2. Portions were also a little bigger then I expected for a 5 course meal. The flavors were clean and savory, rich but not heavy, fresh but not bright. It paired nicely with the fresh greens. The shrimp were small but impossibly tender. The croutons were a decadent touch. 4. Veal with maple, hazelnuts, and celery root. This was the main protein course. It featured a perfectly cooked cut of tender veal meat alongside a breaded and fried piece of sweetbread. Accompanying the protein was a thick and rice maple sauce. The heavy and very indulgent really benefitted from the sauces and pickles on the side. Not my favorite course but it was still a fascinating experience. 5. Strawberry with basil, coconut, and ginger. This was a strawberry sorbet with a rich basil sauce, dollops of coconut sauce, strands of meringue, and with some ginger sorbet on top as well. The flavor of the strawberry was so strong. I was able to enjoy the flavors of all the elements separately, but because the strawberry was so strong, only the basil was able to stand up as a complement to it. The coconut and ginger a bit lost. The first and second course were the favorites, probably some of the best dishes I've ever had. I'm not a huge fan of dark/heavy meats, but still found the veal to be interesting. Not sure I would be excited to eat it again like the first 3. The dessert could use some tweaking as well to get a better balance of flavors. All in all though, one of my top dining experiences this year and I will be coming back given the opportunity. read more

Came here on a Saturday night at 7p and was able to find a seat for 1 at the bar. The restaurant was packed and everyone seemed like they were having a great time! I was still able to easily able to converse with the bartender with no issues. I tried the Sancerre and ordered the 5 services tasting menu. Given I don't eat beef, the veal and beef were replaced with eggplant and cod, respectively. Started off with the sea bass which was very light and refreshing especially with the apple flavor. The next two entrees - the eggplant and the ravioli - were simply amazing. Both of these were so flavorful that I wish I could have given me more! The eggplant had a crispiness to it which was surprising and interesting, yet enjoyable. The cod came next which was definitely felt like the biggest portion of the tasting menu. I'm not usually a big fan of cod, but this cod was perfectly cooked and left me wanting more too. The chocolate at the end was a nice finishing touch to the meal that was also on point. This was a fantastic tasting menu that I'd recommend to anyone. I was in the mood for some coffee at the end of the meal and tried an espresso martini. I was initially skeptical because that they made a good one because it was not listed as a cocktail on the menu and when the bartender served it to me, 3 espresso beans were not on the foam. We just returned from a wonderful evening at Bouillon Bilk, and it was one of the greatest dining experiences of my life. This is a great place. I purposefully booked this place for the last night of our week in Montreal, a city of the friendliest people in North America. We had two appetizers: trout, of which we wished we'd ordered 2 plates because it was so so good; and hiramasa, a light fish with interesting garnishes, also good. For mains, we ordered the scallops, hands down the best scallops on the planet; and the duck which was pretty good too but didn't hold a candle to the scallops. The wine list is huge and most are over 100 dollars, which was surprising, but we had a nice French wine recommended by the sommelier. Our server was kind, friendly, and efficient. I started off with a gin and tonic. They provide tonic to you in a bottle (was in FeverTree? probably) with a glass of gin. Love that so I could mix to my preference. We ordered off the lunch menu, my wife opting for the lamb dish while I chose the vegetarian option. I ate every bite of the combination of endive and squash combination. Been trying to try this restaurant for decades but just always went to other fav spots. But having tried it now it's going to be a regular place when we visit the city. It was our anniversary so started off with a bottle bubbly. The som knew what he was doing as he opened the bottle w/o a single noise, them some powerful hands to save my bubbles! I chose the five course tasting menu at 100$( NOTE that after 8 or 8:30 pm the items in the degustation menu goes up to 8 or something higher, so you want more food come later). Each dish demonstrated the kitchen's mastery in sauces and nuances with the food. My wife went with the scallops and they were perfectly seared on one side and rare on the other--perfection. The 3rd item was linguine--while our wait staff introduced it as "ramen". Initially the ramen description might seem off but as one is eating it the texture is absolutely ramen like. Along with other dishes, it shows the kitchen's foray into infusing Eastern ingredients and cooking methods. Overall, I thoroughly enjoyed every dish. And our wait staff, along with water and dish delivery folks were super pro. Definite must try. Quick note that while many patrons were pretty sloppily dressed, do attempt some respectability to go with the ambience. I made reservations for Bouillon Bill about a month prior to our arrival to ensure we had a nice restaurant set for our visit. We tried their tasting menu and was such a great choice. They are so kind and adjusted my menu since I do not eat meat. Our server was wonderful and very attentive. The host or manager there was amazing as well. I came by for dinner to try out the tasting menu, which is five courses and seems to change on a regular basis. The service started off great as we were recommended drinks, deciding on a red wine, and had our jackets handled as well. The decor here is fairly simple but the lighting gives an intimate vibe. The tasting menu included the following: - crab (citrus, daikon, green onion) - beef (razor clam, dashi, white soy) - tagliatelle (calamari, whelks, calabrese) - veal (dukkah, cipollini, pear) - chocolate (maple, banana, macadamia nuts) I thought the crab and beef were standouts. The crab meat was so soft and juicy and was a great way to kick off the menu. The beef was a carpaccio and the broth that accompanied it was so flavourful. I thought the other dishes were average hence the rating. Another thing was that there were often long waits between each of the tasting menu dishes, in particular waiting for the veal. It would have been nice to have the pace of the tasting menu be a bit more consistent. This review is long overdue. I wish I could give 6 stars because this restaurant deserves it. We went here in the summer of 2023. The meal was one of the best that we have had in recent memory. It was so good that it has become the standard against which we compare our other excellent meals. We ask, "this restaurant was good but was it as great as Bouillon Bilk?" It's been more than 6 months, and the answer is still no. Some of the standout dishes included the tomatoes in watermelon vinaigrette, hiramasa, ravioli, and scallops. The dessert was exceptional. This was the only restaurant I booked in advance of my weekend trip to Montreal and I'm glad I did. Of course the plates are hilariously large and the food shockingly small, but that's show biz baby. We did the 8 course pre fix with the wine pairing. I'm a large man and can drink a lot but I think a half glass for every single dish is too much. I'd recommend doing the 5 course wine pairing with the 8 course menu. Absolutely exceptional and one of the best lunch table d'hote values you will find anywhere in the world! Folks, this restaurant would 100% have a Michelin star if Michelin came to Montreal, and their lunch 3 course prix fixe menu is ONLY 50 CAD (and that includes choices between 2 options of appetizers and mains). It does not get much better than this, and even in other countries where similar lower price prix fixe Michelin lunch menus exist (England, France), this is amongst the best in terms of quality and taste. Just look at some of my pics to see carefully and artistically crafted dishes, amazing cooking skill (the chicken and quail were so SO tender), and tastes that you will remember for a longgg time (the texture of the yogurt custard dessert - never had anything quite like it - AMAZING). I won't do my usual course reviews, as the menu changes every day so my course comments wouldn't be very helpful, but just know that not a single dish was lacking and 2-3 dishes were completely divine. This is a lovely, spotless restaurant with impeccable service. We saw dates, a family, a table with a Gemini award on it (!), all kinds of people enjoying the great food and wine they had to offer. Otherwise if you have $300 to spend for drinks, wine and food in this economy you're in the right place. Only caveat is the noise. They could do some noise dampening and mitigate that. I'm also a little miffed at having reserved a specific table and when I got there they place my group elsewhere and I didn't appreciate that. Very solid food from Appetizer to desserts. The dishes were better than most restaurants in NYC. I would compare to a 1 star Michelin restaurants. The service was good but not a Michelin service. The space is small and with some noise but would allow for conversation and romantic dinner. Appetizer: Octopus 5/5 very tender. Melt in the mouth. Very flavorful Cold Foie Gras 5/5. Great pairing with beets and some crunchy nuts. Different way of eating foie gras. It's risky since I can see some people wouldn't like it but we think it was very good. Main Dish: Scallops 5/5 this is on their menu all year round. 3 jumbo scallops. The sauce and the mushrooms was a surprise that made this dish better than the typical scallop dish Duck 5/5 I was debating to get this dish since some reviews said it was tough and chewy. I'm glad we ordered it. It was juicy tender and very flavorful. The corn mushroom side dish made this dish stand out from any other restaurants. Fowl 5/5 this was another surprise. Last time I had a breast this tender was from a 3 -star Michelin restaurant. Fig sauce was a perfect blend. Our teenage son who typically goes with a steak finished the entire dish. I love all 3 dishes. It would have been tough if I were to choose just one. I might go with the duck because of the corn side dish. Desserts: Baba caramel sponge cake 5/5: the boys favorite. The caramel and ice cream were not that sweet. And it felt light which was good since we had so much food Strawberry buttermilk 5/5 this was my favorite. The lightest of all our desserts. Love the crunchy meringue and pieces of white chocolate Dark Chocolate 4/5. If this was the only dessert we had, I would have rated it 5. The reason I went with the 4 is because it felt heavy after all the food we had. This one would please a dark chocolate lover. It may be too strong if you are milk chocolate person. Mignardises 4/5 - 4 pieces of very well executed bite size. It's perfect to have with coffee or tea. The watermelon bit was bursted with flavor. Chocolate cake was very moist. Lemon cream ball was my son favorite. The chocolate had strong coffee inside. This is the best way to end the meal. The drinks and wine were solid as well. After dinner espresso was very good. I came here on a business trip and liked the food very much. It's great value for money. We tried their chicken liver pate, smoked fish, the scallop dish and the linguine. Everything was delicious and beautifully presented. I will definitely consider revisiting next time I'm in Montreal. read more

By far one of our most memorable meals in Montreal. Wow! It was an experience that did not disappoint. Voted 23/100 of Canada's best restaurants. The restaurant itself is understated however the food is truly tantalizing! We came for lunch as per one the blogs write ups suggested. My partner and I went for the table d'hôte and a few select options from the menu to try.
