    Carbone's Pizzaria is okay - average - I probably wouldn't go back again. Carbone's is mostly setup as a takeout place. My experience as a sit down restaurant mostly sucked. The food was okay - mixed results. I'm probably being overly generous and I'm calling them out as a 3 out of 5. First and foremost - the pizza. The flavor of my pizza was very good. I really loved the sauce and the generous amount of cheese. On the other hand, my thin crust was so incredibly soft, soggy and soaked with grease, I couldn't eat any of it with my hands. It was like trying to pick-up a wet paper towel. I was forced to use a fork for my whole pizza. The rest of my food was pretty lame. My fried pickles were okay, nothing special. I suspect they were purchased pre-made from some wholesale company. Disappointing. My hot hoagie was okay. Frankly, I could have done a lot better at home. (I could have bought a small bag of Lays potato chips myself too.) My chocolate brownies were sad. They were dry. They tasted like they were made from mix in a box the day before, left to dry out for a day, and then thrown in a microwave for 30 seconds. A waste of money. I could have done better buying some pastries from the Holiday station across the street. No soda fountain machine??? They only have cans and liter bottles. (Again, setup for takeout, not inside seating.) I actually had to buy 2 cans of soda to rinse down all my food. Last but not least, the owner was super grumpy, never smiled, and acted like he just sucked on a lemon. Someone with a smile and a nice demeanor would have cheered things up considerably. I might have Carbone's pizza delivered if I lived in Hudson and had too much to drink. Other than that, it's a pass for me. -Daddy Maxx Retro

    Very good pizza. Drinks are from a can, so no free refills. We really did enjoy our pizza and fried pickles though.

    Now this is a pizza!!!! A mainstay in the local area. Run by local and friendly people.

    tell me where you can get a better tasting pizza.i have tried all of them in hudson and carbones is the best. nice people

When we arrived we were seated quickly at a nice table in a themed Italian space. We had the Calamari, an the Escargot. And finished with a piece of their homemade Tiramisu. All were very tasty: Calamari was a crispy, well flavored rings (darn I like the little squid) with a good sauce. The Escargot were plump and the garlic butter they came with was delicious, used the bread (very nice Baguette) to sop it up an hold an Escargot! A finished with the Tiramisu which was everything a good homemade desert should be ! The only suggestion would be to up the presentation on the plate of both of the dish's; the calamari and the escargot But had nothing to do with taste, which was excellent.

The waiter and bus staff were great at getting our requests and being prompt with everything. The food was great & good. All of the food was served fresh and hot as it should be. They have a great house Chianti that is reasonably priced by the bottle. The filet special was out of this world awesome. Cooked perfectly medium rare, the cut was top shelf and flavor was incredible. The whole dish was excellent with the mushroom red wine reduction on top providing that blast of flavors that complemented a filet. I may get this every time if they continue to have it on the menu. The fettuccine alfredo was good. The pasta was home-made and cooked perfectly. The sauce was a bit bland and was missing something. Maybe some more parmesan, maybe just salt, not sure but while it was good, it lacked the big creamy flavor that alfredo should have. Chicken was very good, grilled and tender. So this one was "Good" The seafood special was another "Good" one. The shirimp was done perfectly but the rest of the seafood was maybe just a touch overcooked. The sauce was a cream sauce but like the alfredo it lacked just a bit of flavor that would have made it a superb meal. Many guests will love that we have a very good Italian place again in North Hudson as it's part of the heritage of the community. We will go back for sure!! CM
