This is a small stand/shrine of porky goodness in the eatery section of Mercado Hidalgo in Guanajuato, Guanajuato.
They sell carnitas either alone, or in soft and hard tacos, and tortas which are French rolls stuffed with the savory meat. When your turn comes to place your order with the man or woman who chops your pork and fashions your choice of hand held food (I always chose torta) he or she will prepare a little freebie taco of a few shreds of carnitas inside a soft corn tortilla. That little taco that they hand you whets your appetite for your torta or whatever you order. You can stand right there and eat or sit at one of the ten or so stools that surround the carnitas stand. Make sure to put some salsa on your food. They have bowls of several types. They also sell delicious chicharron (crispy fried pork skin) and raw pork pieces to cook at home. read more
