    Carniceria Uruapan has authentic traditional Masa for Tamales. Mara helped us out. She made bags with different wights for the different tamales that we will be making. The masa is ready to go or make fluffier with a mixer. They have sweet masa and everything needed for the stuffing. We have been going there for over 15 years. It is worth the small drive to get excellent masa for tamales. We make traditional filling but will try new recopies this year. We are making Chorizo and cheese and Mole tamales this year. They have ready to eat burritos, meats and delicious Pan Dulce. Uruapan is worth the drive.

    This place has been here forever and their experienced staff shows it. I was greeted and asked what I wanted. I wanted some decadent Chicharrón with bits of meat. Not the most healthy thing to crave but worth the extra exercise to have that Smokey, fatty pork skin crunch in your mouth. Try some!

    As I finished off my taco lunch at a newish restaurant called Guisados with my friend's dining group Pleasure Palate, the owner of Guisados drops off a tray of fresh baked Pan Dulce for us to nibble on. I could not believe what I saw right in front of me. I was a little skeptic, because the Pan Dulces that I normally eat are from the local Latino grocery chains like Vallarta. The large grocery chains have breads that super dry and dense like stale bread. A few bakeries that I've gone to in Santa Ana and in the San Fernando Valley are a little fresher and much larger in portion, but it still lacks a little flavor. As the tray of the Pan Dulce was passed around our table, questions tossed around in my head..."Do I want it? Or should I pass on it, because I ate too many tacos?" Oh dear, I really didn't have the appetite to eat one more bite, but I grabbed a piece instead. "I'll find room in my stomach," I said to myself. I took a large bite into the Pan Dulce. Oh, it was wonderful! It is not like the stuff that I'm familiar with from the grocery chains. It was light, fluffy, and has the texture of Hawaiian bread. This Pan Dulce is remarkably tasty and fresh. According to the owner of Guisados, his brother owns Carnitas Uruapan Market, which is directly next door to Guisados. I've literally drove passed Carnitas Uruapan Market many times on my way to chase down a taco truck or two before Guisados ever opened in Boyle Heights. Carnitas Uruapan Market is actually a meat market, Panaderia (bakery). Coincidentally, they also mass produce and sell the masa for those infatuated with making their own tamales and tortillas at home. The also sell to a few local restaurants including Guisados, which is no surprise. Well, a few dining buddies and I headed next door to Carnitas Uruapan Market after our luncheon at Guisados. I purchased 7 pieces of Pan Dulce. Surprisingly, it only cost me less thant $2. The organizer of Pleasure Palate indulged on her purchase, a 2 pound hunk of chicharone to bring home to her family. I looked around the market and found prices for fresh cut meat very reasonably priced. Just by looking at the meats in the case, I can tell that the quality is pretty good and they butcher their own meats. Now that I know about Carnitas Uruapan Market, I'll be back for more Pan Dulce.

    The masa i bought on Carnitas Uruapan.. more lard than anything..... its bad to sell this to us as customer.

    My family has been buying the masa for our tamales her since I can remember. It is worth the drive from the SF valley.

Their recommendation are always on point and they even will provide you ice packs on request for your freezer bag if you are going to be doing some shopping or have a decent drive back home. I love that they are well knowledgeable about all the products and take the time if you ask to explain the differences in the meats and how they should be cooked for the best experience. If you are ever by the grove or farmers market ask for Brandon (likes to go by B) or Byron they are always willing to help and make sure you are more than satisfied with your purchase. The great thing about them is that they are father (Byron) and son (Brandon) which means they are passing down the skill set and knowledge regarding butchery and meats. If you are in the area or have the means to travel I definitely recommend supporting this establishment at least for your ultra premium, exotic, or seasonal meats.

Buy a pound or three of raw house-made meatloaf ready to take home and bake! Thinking about grilling some great burgers. They offer Nancy Silverton's special mix of beefs for perfectly juicy burgers (available in 1/4 pound and 1/3 pound raw patties.)
