When he left that evening, we had 25 knives that perform like new. Even the ones that would have bruised a banana now slice a tomato like a laser. I remember back when I took a few cooking classes, they mentioned that the knife sharpener we have in our kitchen drawers is just for "de-burring" a knife and you need to take them to a pro sharpener to have a new edge ground once in a while.
