Overall: 3.5 stars Loved the menu and specials. Really nice staff. Note: They only take cash or Venmo. And sometimes run out of certain meats (common for food trucks). I ordered a street taco with pollo because the photos looked so good! And I got the large nachos with birria (shredded beef in stew) with everything on it. (There were only these two meats available, so I wanted to try them both.) The order came out in roughly 15 minutes, which was good. The size of the items were okay, but surprisingly the meats were not very warm. The taco looked bland, but it tasted good with the cilantro and diced onions. The nachos, on the other hand, was underwhelming -- mainly because it sat underneath a mountain of what looked and tasted like Velveeta cheese. The squeezed dollop of sour cream didn't make it look more appealing. I think the tacos and platters are the way to go. read more

It took three attempts to finally try Chubby's. Why? It's actually a food truck near the veterans center. You have to follow their social media for their every changing hours. Once I finally got to try chubby's, I ordered the birria crunchy tacos, however, they got my order wrong, and made them soft. Food is definitely good. What an unexpected surprise find thanks to Yelp! At time of posting 15 reviews - all 5 stars. We came here after kayaking at Elkhorn Slough, not knowing what to expect in this random parking lot. The food did not disappoint! Birria, cheese, ramen - such an amazing combination. Our only regret was not ordering more food to take home! It's also fantastic to support a local business. The owners are husband and wife who grew up in the area and saved until they could afford their own food truck. They are very friendly, offering suggestions on what to order, and chatted with us and other customers while we waited for our food. Several customers were regulars. Chubby's Taco's Food Truck, usually parked outside VFW Hall at 1960 Freedom Blvd. FYI it's cash ONLY! (and it's a woman owned business!) I have watched them on IG for a while and was enthralled with their "grown up" version of the Taco Bell Crunch Wrap, so on Thursday evening I made the drive down to Watsonville for it. My only critique was I wish the guacamole and the sour cream was a little more evenly spread out, I had to strategically take bites from each end to make sure I got every ingredient in each bite! It was $15 for the regular carne asada crunch wrap (they have a flaming hot Cheeto one too, but I went for the original one) and when I got home it felt heavy, so I weighed it after I had already taken two bites and it was still over 1.2lbs!! They specialize in this and Birria, and have a Birria pizza that I've seen many post about!
