We had only been to this Distillery one time in the past and boy what a difference a year makes. They extended the sitting area and have a wonderful back room for parties. They were so knowledgeable about their products and we really enjoyed the comfortable atmosphere. We did a tasting and also ordered some drinks off the menu. Connecticut Distilling Company is a craft distillery that opened in Waterbury, Connecticut in September 2024. It was founded by business partners Stelios Stavrianos and Dimitrios Zahariadis. Stavrianos is the founder and CEO of CoreBev: a Waterbury-based alcohol manufacturing company founded in 2012. It is dedicated to bringing high quality and unique spirits and beverages to the market. Zahariadis founded the Cocktail Chemist Bev Company which was acquired by CoreBev in late 2021. He has since become the COO of CoreBev. In early 2024, CoreBev acquired Waterbury-based Continuum Distilling which originally opened in 2020. Continuum's original founder Brandon Collins, a chemist by trade, remained on as Connecticut Distilling's head distiller. The new enterprise's mission is a commitment to crafting high-quality, innovative, and sustainable spirits that honor Connecticut's rich history and vibrant community. I recently stopped at Connecticut Distilling during their Grand Opening week. Their tasting lounge is cozy, inviting, and comes with a staff of trained mixologists. Most of CDC's products are distilled using beer from locally Connecticut craft breweries. Attendees were treated to samples of some of their products which included a blueberry-flavored rum, a bourbon whiskey, an IPA-based spirit, a roasted malt beer-based whiskey, and a vodka. Everything was very smooth. We were also treated to a delicious spread of deli sandwiches and charcuterie as well as cocktails crafted with CDC spirts. Some of the cocktails offered included a "Welcome Cocktail" (Apple Cinnamon Drops, apple cider, black tea, citrus, bitters blend), a "Smoked Maple Manhattan" (Fort Hill Bourbon, smoked vermouth, Maplewood Farm maple syrup, bitters), and a "Peach Pecan Old Fashioned" (Charred, honey pecan, peach bitters). Happy Hour Ends When the Bartender Feels Like It Went to the 4-6 pm Happy Hour on a Friday. I've been numerous times before, always tip well--in other words, I'm a good customer. On this visit, I headed over from the adjoining Brass Works Brewery at 5:50 pm and waited patiently while the bartender served a group of six ahead of us. Just as we stepped up to place our order, the bartender ducked into the back for a minute. When he returned and I ordered a Happy Hour drink, he glanced at the clock (6:01) and said we were too late. I pointed out that we'd been standing in plain view, waiting our turn since 5:50, and only weren't served earlier because he was busy or not at the bar. He gave a half-hearted grumble of agreement, but by then the attitude had already soured the moment--I canceled the order. This kind of petty, clock-watching, passive-aggressive behavior is exactly how you lose good customers. If the owner is reading this, you might want to have a talk with your staff about what decent customer service looks like. read more

Our work place got together for a Happy Hour event and we all thoroughly enjoyed our time at Connecticut Distilling. The ambience was casual, relaxed, yet fresh and fun. The spacious, yet cozy personal feel of the space was classy and refined, as are their distilled spirits. I started off with an Old Fashioned Apple Drops Cocktail with a cane sugar rim, it was delicious. I paired that with the steak and chicken meat platter with rice and vinaigrette from the Brazilian BBQ Boys truck. It was amazing and there was plenty to bring home to share with my husband. After the owner presented us with some samples of other distilled spirits, I was very impressed with their dedication to making a smooth, tasty masterpiece in every sip, so decided to have another cocktail while playing cards with with my friends at the area to relax and enjoy the relaxing atmosphere. We enjoyed our time here very much and I was thrilled to get a lot of my Christmas shopping early, I purchased multiple bottles for gift giving and for upcoming holiday events and even some Apple Cinnamon Drops for a friend bonfire last night. I did my best to duplicate the cocktail I had from there, and it was a success. We enjoyed the bonfire and my specialty cocktails thanks to their inspiration and made new fans of their spirits. I also purchased some Vodka Seltzers with Elderberry and Violet. Delicious as well. The staff was amazing and I will be looking forward to bringing my friends and family there often. read more

I have been going to Connecticut distilling for a couple of years now. I fell in love with it back when it was still Continuum distilling, and the quality and has stayed consistent since changing hands. They don't serve food in house but normally have a food truck on the premises. The service is always great, and the drinks are delicious. They have a fire pit going outside, and often have live music and different events they're hosting. Stop in on a Friday night for the best happy hour special in town. From 4pm-6pm for $8 you can snag a delicious cocktail from the distillery, and a beer from Brass Works Brewing next door. There's something for everyone here! Everyone here is super friendly and passionate about the distillery. I tried several cocktails here but my favorite is definitely their blueberry mojito! Continuum uses only the freshest ingredients for their signature cocktails. This particular cocktail was made using their house made blueberry rum infused with blueberries locally sourced from Lyman Orchards in CT! It was so good that I had to buy a bottle of this rum to take home. The cozy ambiance is also another reason to come here! They also showcase local artists' work around their taproom! I came here with my husband on a Saturday afternoon and was so excited to see their cocktail list. You can buy a "package" for two drinks and try out their different spirits they make. It was such a good deal and we got to keep their glasses as well. I enjoyed the tonic and lavender cocktail a lot and found it easy to drink and not too strong.
