Copper State Kitchen performed outstanding in bringing the Chef to our home for our 40th Anniversary. My wife and I love to cook and have prepared some outstanding meals at home over our 40 years together. We have extensively traveled and lived throughout the world and as such developed pallets for superb cuisine from all over. As we grew older we gleaned the best of what we enjoy and developed them into our own cooking skills. My wife being Korean born refined her cooking skills in the eastern cuisine like Korean, Japanese, Thailand, and others while I have refined my skills with French and Italian. Prescott is a beautiful place to live but its culinary basis is built on sawdust. We usually cook for ourselves if we want a top notch meal. Now the past several years I have been confined to a wheelchair and transport is very limited. We used to spend winters in Hawaii where we could get great quality meals and seafood whether we prepared them or went out. So our 40th! I wanted to do something special for my wife since I have not been living up to my end of our culinary relationship being confined to a wheelchair. Thus I started seeking out a Chef that would come to our home with his staff and prepare a custom made meal for us. I selected Chef Thomas and Copper State Kitchen. I started by a rather lengthy discussion via phone and followed up with sending Chef Thomas some of our favorite recipes, sufficient for him to develop a five-course meal for us. Chef Thomas is very professional and easy to work with. We refined the meal over the next two days we agreed on the following proposed menu; I supplied the wines. Amuse-Bouche * Fig Jam, Blue Cheese, Red Wine Poached Pear & Arugula Crostini Starter * Prime Rib Poke with sesame crunch and microgreens and pipkuala aioli (based on my deconstruction of the infamous Tiki Bar in Waikiki dish) Pasta Course * Lobster Tagliatelle in a Champagne Cream Sauce Main Course * Beef Wellington with foie gras and red wine demi-glace Dessert * Crème Brûlée (torched table-side) Wine Pairings * Santa Margarita Prosecco DOCG * Domaine Salmon Sancerre Sauvignon Blanc * Tenuta de Sesta Brunello di Montalcino 1996 * Chateau Rieussec 1st Grand Cru Classe 1863 Sauternes 2004 Every course was perfect and very enjoyable. Went to an event today and was pleasantly surprised to have such yummy tastings catered by Chef TJ. He was so friendly and personable and even showed me the inside of his food truck! Now let me talk about his food! Short rib and polenta cakes- red wine braised short ribs on a pan seared polenta cake- oh my these were so flavorful and tender and the polenta cake consistency was just perfect. I kept going back for these. Grilled chicken teriyaki skewers- marinated perfectly with just the right amount of sweetness. Most chicken teriyaki is too sweet for me but these were done right! Bruschetta bar had all the fixings- tomato, basil and fresh mozzarella, prosciutto, burrata cheese, roasted garlic (this was my fave), blistered tomatoes, strawberry, fig goat cheese and pepper jam. They catered my 60th birthday party and the food and service was excellent! The presentation and display were outstanding also!

If i could give no stars, I would. Very unprofessional. Came a half hour late-which pushed my entertainment for the evening back a half hour. Did not set up quickly or offer service as promised. Helper and chef stood back and watched the line grow in between looking at their phones. Was promised vegetarian and gluten free options for a $3000 order. Had only slivers of palenta mush as the "option" for the vegetarians. We were promised guacamole-for the vegatarians and received cheese and nacho chips??? We were also promised gluten free bread for the bruschetta bar and the brownies- of which there were NONE. We were promised 90 entrees and desserts, and the desserts were gone within 5 minutes and many people complained they did not get them. When asked for a refund, Thomas Miranda kept saying he would "respond today" and a week later, has yet to respond. Don't call this guy. He is unprofessional and does not deliver what his soft spoken voice promises. Be careful who you give your money to. read more

We hired Copper State Kitchen for a 500 person brunch event and we were super happy with everything Chef Thomas did. He created a full brunch menu and the adjusted accordingly based off of my requests. He was even able to accommodate last minute requests, changes, and ideas. On event day, everyone was also very happy with the quality of the food. We did run into a set up bottleneck shortly into the event, however Chef Thomas was able to adjust quickly to mitigate the bottleneck. Chef Thomas was super easy to work with! Attended an event, which was catered by Copper State Kitchen, at a church fundraiser and was told there would be vegan options. Was very disappointed in the food options for vegans. 2 small quarter size polenta bites, chips and salsa with a few cut vegetables. Guacamole was non-existent and no alternative meat options. Highly disappointed in the glutten free bread and dessert options, as they too were not provided. Organizers were very apologetic and very disappointed in the service that was provided by the vendor. Five stars aren't enough to adequately indicate the amazing event Chef Thomas provided for a recent family 70th birthday celebration in Mesa. To say Chef Thomas catered a delicious meal for twelve does not do the evening justice. Everything about our experience with Chef Thomas was delightful. In addition to providing food (appetizers, family style meal & dessert) that was to die for, he was engaging and creative in ways a group ranging from 4 yrs to 70 yrs all appreciated.
