Maybe we're not fair judges - having eaten mostly of Japanese and Peruvian cuisine in our lifetimes…read more- but Mutuo was wonderful surprise that went beyond expectations! At first we were concerned with a restaurant located inside of a Sheraton, but the ambience of Mutuo's little area inside the lobby is chic, super hip, and very private. The food is Puerto Rican/Japanese/Peruvian fusion (any two of which is wonderful, but all three?!?!?) and every bite was fantastic. We started with the entirely vegan pisco sour made with aquafaba instead of egg white. More subtle and fragrant than your typical Pisco sour, with hints of ginger, gentler than normal with a delayed but powerful punch. We then started with the pork dumplings - a total winner, combining flavors of soy sauce, smoke, and minced onion with big bites Puerto Rican pulled pork. Sweet, smokey, and salty all at once. We followed with flank steak "anticucho." a Peruvian staple that's usually made with beef heart, but instead made here with strips of tender flank steak paired with classic Peruvian flavors of aji and crema. Delicious, soft but well charred, beautiful presentation. We took a break with a salad laced with aguacante and seaweed, paired with a soy-based vinaigrette. Then finished with a big plate of ceviche - perfect fillets of whitefish, rings of calamari, coins of mussels, oversize shrimp, all with the classic accompaniments of red onion, sweet potato, and cancha (Peruvian, crunchy corn). On this one, the Japanese-altered leche de tigre was too sweet for our taste - we missed the acid and salt of punch traditional ceviche. Luckily the server had a bowl of aji rocotto standard ding by for a kick. But as a plate of raw fish, it was impressive and plentiful. We finished with a manjar blanco flan - a showstopper. Smooth, ultra sweet, with caramel syrup and bites of Italian meringue. Among the best we've had, especially if you're a sugar addict. Server Hira was warm, knowledgeable, and super smart about food - absolutely steered us in the right direction and gave us a wonderful attentive service. Congratulations to the entire staff of Mutua for putting on such a great culinary show.
