So I did what most cocktail hunters do...jumped on Yelp searching for a speakeasy vibe and craft cocktails. Parliament popped up almost immediately. No huge expectations. Just some cool photos, decent reviews, and a gut feeling. I threw caution to the wind, trusted my instincts, and rolled with it. First win? Parking. Found an open spot directly across the street from the bar, which in Uptown Dallas already feels like beating the system. The surrounding area gave off that perfect Uptown energy...condos, upscale apartments, city lights, polished but still alive. The crowd inside immediately hooked me. Total melting pot of beautiful people. Hipsters, urban style, chic fashion, casual cool... this place pulls everybody in without trying too hard. No physical cocktail menu was handed to me, and honestly? I loved that. You can clearly look it up online if needed, but I'm the type that likes to test the bartenders and see where the night goes. The place was PACKED for a Sunday night; but hey, we all had Monday off, right? Walking into Parliament felt like stepping through a portal into a late-night New York cocktail bar. Low lighting. Ornate chandeliers hanging overhead. Deep red ambient lighting washing over the bottles behind the bar, highlighting every curve and label perfectly. If you know, you know. I finally squeezed into a tiny opening at the end of the bar and met Chris. First drink order: a Black Manhattan with an absinthe rinse and spray, built with Michter's for that perfect spice profile. Chris didn't even flinch at the request -- in fact, he was completely dialed in and vibing with it. That's always a sign you're in the right place. The music? Perfect. The atmosphere? Even better. Despite how packed the bar was, the reservation-only tables scattered throughout still managed to feel intimate. Couples and small groups were locked into their own conversations while the ambient noise, music, bartenders, and cocktails all somehow blended together into one seamless experience. It's hard to explain unless you've experienced a truly balanced cocktail bar environment before. Then came Mitch. Mitch absolutely crushed it with some incredible tequila-forward variations from a White Negroni with Arette tequila to a tequila-based Martinez that completely worked. They're also stacked with some beautiful sipping tequilas if that's your lane. Mitch even let me sample his version of a dirty martini, and that teaser alone made me want to come back for round two. Chris and Mitch absolutely delivered. Last but definitely not least was briefly meeting Shauna. What a genuine host. She took the time to check in, talk with me, and sincerely cared about my overall experience at Parliament. That kind of hospitality matters more than people realize, and it elevated the night even further. So if you're looking for an escape this is the place. Great cocktails. Great hospitality.
