The thing I've had, on every visit, is the Avocado Fries. They are slices of avocado lightly fried served with slaw, and homemade pickles. Each component of the dish is amazing on its own, but the real magic happens when you cut a bite size piece of Avocado, cover it with the slaw, and top it with one of the homemade pickles. Your taste buds will rejoice as all three components of the dish come together and make a flavor that makes you say, "WOW! Thats GOOD!" The first time I tried the avocado fries as I described above I was having a bad day, and I wasn't sure that things would get better. This dish helped turn my day around. I know the Chef at Tailgate Bistro, will do great things in his career, because he puts a lot of thought and soul into his food.

Let me tell you, Chef Tim is an amazing teacher. You want to learn how to make sauces, how about puff pastry, International cuisine, butcher or cook game the you should know you have a great resource in Chef Tim and Cooks Gathering. He motivates you learn yet helps you find strengths. For me, I have become a really confident home cook and become strong making breads. Don't believe me...ask my wife. For Valentine's Day I made Filet Mignon with a bourdelaise sauce accompanied by pommes Ana and roasted veggies. Dessert well that was an French Apple Tart Brûlée. These were all learned from Chef Tim. If you like to cook then take advantage of Chef Tim's skills. Oh and if your having a special event....well I don't think you can do better. Chef is a graduate of the Culinary Institute of America and has been executive chef in numerous restaurants and has cooked all over the world. He us the real deal.
