Introducing Science Ice Cream - Wales' first liquid nitrogen ice cream parlour!…read more Liquid nitrogen ice cream is different, in the best possible way. As each and every serving is made right in front of your eyes, it's fresh. That means that the flavour is everything it could be. As it's frozen in seconds, it's also very smooth. That means that there's a velvety texture and a creaminess that you won't find in the tub at the bottom of your freezer. The Science: The liquid nitrogen rapidly creates miniscule ice crystals, quickly evaporating after coming into contact with the ice cream base. Liquid nitrogen boils at -196C, meaning that there won't be a trace of it left by the time you've given yourself brain freeze. I think it's safe to say if Science lessons were this much fun (and edible) I would have left school with a completely different career path.

Not only is the location wonderful and a perfect location to stop and rest while visiting the castle, but the ice cream is just downright tasty. Our whole trip to Wales was wonderful, and we stopped here to top it off before we headed to the airport. The staff engaged us in a supportive and friendly manner and wasn't too pushy. We felt very welcomed. It is on the pricey side, but not ridiculous.

Though I don't think this is the best ice cream in the world (or country or even county), I *do*…read morethink this is a great attraction. It was a lovely little farm, with cute towns and another farm (that makes cider) nearby. In the main building, there are detailed descriptions of how the farm and the dairy work, including photos, video, and a peek into the facilities themselves. It wasn't crowded - even on a Saturday (though note that you can't see the dairy workers live on Saturdays). There were farm animals you could pet or see (pigs, chicks, etc.), and a place to wash your hands afterwards. The gift shop was cute: it sold fudge, stuffed animals, greeting cards, books, plates, and of course, ice cream. The tea room had ample flavors, and the cashier/ice cream scooper was very kind and charming. I enjoyed the chocolate fudge flavor, and my friends liked their white chocolate hazelnut and mint chocolate chip. They also offered clotted cream vanilla, clotted cream strawberry, clotted cream black currant, cherry jubilee, pistachio, oriental ginger, honeycomb crunch, banoffee, and lemon sorbet. Looks like the flavors vary depending on when you visit. I'm so glad we stopped here. It was an excellent way to break up the drive.

We're talking rich, creamy, made with fresh fruit and clotted cream, bursting with flavour, sweet but not overpowering, icy wonderfulness here. The first time I had this, I was in shock ice cream could be this amazing. Fast forward 7 years, and I don't feel like I'm actually home unless my visit has involved eating Callestick Farm ice cream. The absolute best is the blackcurrant & cream (made with Cornish clotted cream!!!) ice cream, but I'm not positive they're still making that. Otherwise, the strawberry and cream is a close second! Best of all, not only can you get these by going to the farm (which I've done) but now, you can also pick up pints at Sainsbury's, and tons of local restaurants, tourist traps (does every English Heritage site in Cornwall stock Callestick?), and shops also sell Callestick... Sometimes I'm really surprised that I don't leave Cornwall weighing 10 pounds more than when I arrived... and also, really grateful I can't get this stuff in Canada.
