Our family has been so fortunate to have this trip to Paris, and we experienced a wonderful time at this amazing restaurant. First, the people who make up the Cypsèle family are so passionate and caring about their establishment, and they work very hard to ensure that patrons are happy and comfortable! For me, this is the hallmark of any great artistic endeavor or business! I would consider the restaurant "fine dining," but do not worry that you will feel undervalued. Everyone is very welcoming. Second, in addition to amazing care, attention, and hospitality, this may have been one of the very best meals we have ever eaten. As no two menus are ever the same, I don't think I will spoil any surprises to talk about the food. The meal gave us new ways to think about ingredients, but the dishes weren't novel just for the sake of being novel--they were thoughtful. We especially loved the vegetable dishes (the "tea" with fresh peas and the green asparagus with raspberry and cream), the mises en bouche (beef tartare and fish in tempura batter), tuna belly with broad beans (the broad beans were wonderful), the wood fire roasted pigeon, the sorbet, and the "floating island". We had never had the opportunity to try pigeon, and Quentin was kind enough to explain the history of the dish without any prompting. This was a culinary adventure for us that should not be missed if you have the opportunity! Delicious! And yes, we would end all of our meals with a pint of loquat sorbet, if possible!
