We did not feel like we were waiting very long. I ordered a pour-over with the Finca El Paraiso Peach Colombian beans, which use a thermal shock washed process. That was something I had not heard of before. The tasting notes listed nectarine, tropical fruit, and caramel, and it was recommended since I was looking for something more out of the ordinary. I enjoyed the wilder flavor profile, but it was hard to fully appreciate because the coffee tasted overly diluted. The barista mentioned she used a 15g to 250g bean-to-water ratio, which is higher than how I normally enjoy my pour-overs. My cousin ordered a flat white with whole milk that was very creamy with strong espresso notes. We also ordered a matcha latte for my other cousin, which was apparently too creamy. Overall, the beans themselves were good, but the pour-over leaned watery for my personal preference. The bag of beans used for the pour-over was priced at $32, which is only a bit more than double the cost of the pour-over itself. In hindsight, I felt slightly ripped off and should have just bought the beans instead.

You can tell them your preferred roast and they'll pick the beans based on your preference. They have a wide selection of beans and prices vary based on brand, but they're pretty much between $19-27. I'd definitely pick up some more beans next time I'm in the area! This time I got 42 because I told them I make espresso drinks (eg latte) at home, so they picked something for me. My drink took about 7 minutes and it was full of flavour. It came with some biscoff, so it was a perfect match. They used the Chemex and did a double pour lol The staff told me they recently took over the soup business from a fellow vendor (within the market), so they've been getting busy trying to manage all the orders and customers. My iced latte also got watery pretty quickly as the ice melted it seemed, and ended up tasting more like the kind of latte you'd get from a fast-food chain (or the espresso shot was way too long). A bit of a letdown, especially since the two fairly small drinks came to about $18. The space itself is cozy, and I really like the vinyl collection (which earned the 2 stars). That said, the records are noticeably pricey compared to typical vinyl shops like Sonic Boom. A lot of them -- even ones with just Side A -- were priced at $55 and up. I didn't cross-check the barcodes on Discogs, but while I love the curation (especially the focus on Japanese jazz and city pop -- really cool stuff), I find it hard to believe all of them are rare pressings worthy of those $55-to-several-hundred-dollar price tags.
