I drove out to Q7 Ranch today and bought a few pounds of free range, grass fed sirloin, ground beef…read moreand few pasture raised chickens (which are better than simply "free range" in that they get to eat more natural grass because their pen is moved a few feet to a fresh spot every day). They also have pork but I didn't order any. They're very friendly and easy to buy from. Just call first to make an appointment and drive out to the ranch. Most meat is sold by the pound. When I got home I cut the frozen sirloin into 3-4oz pieces and seared in a cast iron skillet (which I think is a more pure way to cook a steak, avoiding any extra flavors which are imparted from cooking over fire). The steak was extremely flavorful. I also minced a piece to have as traditional steak tartare (see picture above). The beef flavor was bright and full -- and the color was amazing. We bought steaks, sausages, bacon, ground beef, and a brisket. The 2 filet mignons we bought were cooked that night and I was blown away by the quality. The flavor was so much better than any typical store bought meat. A couple nights later, we made burgers with the ground beef and it's unanimous that the flavor was so much better than any ground beef we'd ever had before. I absolutely can't wait to try the sausages, bacon, and especially the brisket, which will be smoked this coming weekend. Needless to say, I think we will be frequent customers at Kearn's Quality Meats because, well, their meat is top notch quality. Also, they have dogs that greet you, and how can you not like that?!

Wallace is a rare combination of the highest quality product, convenience and affordability. Their website is simple to navigate and order from, while the monthly pick up as quick and easy as it gets, you're in and out in 30 seconds. The products, well I don't know where to begin. Everything I have purchased from them has been excellent (and there has been a lot). I have purged my kitchen of any grocery store bought meat and have switched solely to Wallace. Their meat comes vacuum sealed and frozen, which has resulted in my freezer being stocked to the brim with grassfed, organic and ethically raised meat. I challenge you to find a better steak in the city at any price, let alone the prices they charge. For a similar cut at these price points, you're probably looking at a styrofoam tray with a gray piece of meat on it from your local supermarket.
