The beef jerky and beef sticks are really good and the sausages are made perfectly I recommend coming here

They keep the place super clean and clearly explain butchering options. They offer a variety of deer stick favors - all good. I brought a deer in to get processed for the first time, I've been hunting for 42 years. I've known about John's Elgin Market for many years, however, I've always processed my own deer. I wish I would have started going to John's years ago! The people at John's are absolutely amazing, helpful and professional. Brought in 30lbs of ground venison, for sausage. They charged 280.00 what a rip off and it sucks.

I have never taken the time to do this, which is unfair to the many outstanding establishments I've dealt with, but I am angry enough to write this in the hopes that I will help other hunters. John's claims to process deer, but what he really does is simply hack a deer carcass up with a band saw, package it up and hand it back to you. Never mind that I'd asked for things to be taken care of in a specific way irrespective of costs - the whole backstraps I requested came back as chops. Yep he just ran a band saw through the spinal column and across the top of the ribs. Not a good practice in a CWD area. My prime back strap now looks like bone in pork chops covered in bone dust and tallow that I wont feed to my family. But, that's not the worst of it. The rest of the deer was simply hacked into unidentifiable junks and labeled "pot roast" or was ground. There is zero butchering skill, worse than that zero care about the meat that as a hunter is sacred to me. My blood boils every time I open one of John's mystery packages. I am a member of a local club of hunters that suggests John's as a processor - I will do all I can to assure other club members never do business with this guy. John, if you have the desire to get better (which based on what I've seen you don't), I'm happy to talk this through with you read more

First time we've taken deer to get processed and won't be the last. Turn around was less than a week for two bucks. Just dropped off a third one last week. Breakfast sausage, meat sticks, jerky are really good and well seasoned. Compared to our last processor, we got more for a lower price. Always make sure they write down exactly what you want if you're getting some kind of mount made. read more

Have been going here for the last 5 years. They do great work. Stop in on my way home to S/W Chicago from Wisconsin to drop off my deer. Just picked up my deer today after dropping off only 3 days ago. Got standard cut that includes steaks, chops(cut back straps), roasts, and ground. Also got brats, breakfast sausage, and beacon. There were 3 1/2 packages total I picked up. Cost me $150 exactly. Don't go anywhere else. Got the same size deer, actually maybe even slightly bigger, in Southern IL first firearm season and took to processor in Palestine in Crawford County. Got back 1 1/2 packages of meat. Cost me $118 but I didn't get roasts or beacon like I did from John's. What I got was ripped off! read more

A+!! John"s Market is a hidden gem. There are not an overabundance of markets around the Chicago area who will process fresh venison, and these guys are pros. Reasonably priced and extremely quick turn around. Everything was returned professionally wrapped in butcher paper with detailed labels. I tried the snack sticks and a summer sausage and both were fantastic. I look forward to seeing these guys every fall for years to come. read more

I have to say that I'm extremely disappointed in them. I've been using John's market for years to process my deer and have never had a problem. I've never been interested in doing a mount, but have always asked for the rack back if it was a buck (who doesn't?). Anyway, This year I shot the biggest buck I've ever shot and wanted to do a European mount with it. I made sure to make them aware of that when I dropped the deer off and saw that the ticket had "head out" written on it. When I got the deer back, all I got was the rack, and they had cut off about an inch of the tip of a kicker point coming off the back of it. To say that I'm upset is a huge understatement. I was not the one who went to pick up the deer but they acted like they were confused about what I wanted instead of owning up to the mistake and never said anything at all to him about cutting the tip of the antler off. I just got off the phone with them and all they would do is apologize. I guess they don't care if they lose a customer rather than at least offer up a free deer process. Shows how much they appreciate their longtime customers. read more
