I chose to have the mayo in all of the rolls; the staff mentioned 3 levels if I recall: regular, a little, and no wasabi mayo. For the wasabi tolerance, I was pretty alright, it didn't sting my nose. However, this depends on the person because the same amount made a relative of mine sniffle through the eating experience. Once you check out you are given chopsticks and Kikkoman soy sauce. We took our sushi to Chicha San Chen to sit and enjoy our little lunch with some top-tier Taiwanese tea. I will say that several times the fish would fall off the rice, some of which was a bit clumpy, but I simply treated it as sashimi with a side of rice.
