Eatsa looks like a standard bowl restaurant, with ordering on screens and options to modify different generic salads. However, the quality of the ingredients and flavors transcends this culinary genre with the sheer deliciousness of its flavors. From tzatziki to feta and broccoli to cauliflower, the flavors are cohesive, not a jumble of buzzword pseudo healthfulness. Although the preexisting bowls seem like strong options, the ability to create my own salad was most enticing. The cauliflower and broccoli were both great additions, the former with an addicting soy dressing and the latter with a perfect paprika sprinkling. I was thrilled that the flavor relied on vegetables rather than a heavy-handed sauce. Eatsa is the kind of place that would be a standard player in my rotation if I lived in Nice: quick, affordable and delicious. However, the portions aren't that generous, and the dishes are served in small bowls that make mixing them difficult such that it's impossible to get every ingredient in every bite. Also, having more interaction with a cashier or server would help Eatsa become a restaurant rather than a glorified vending machine.
