I keep trying this food truck wanting to like it. I'm 0 for 2. I want to like the basil chicken and rice and I just can't. The first time I got it medium hot and could barely eat it, I couldn't feel my lips. I've had medium at other Thai restaurants and I can manage. Tonight I got it mild and this time it is like someone accidentally dumped a whole salt shaker of salt in it. It's nearly unpalatable. It's pure salt with no other flavor. You won't find better Thai food anywhere in North Florida! I highly recommend the thai tea (best I've ever had), pad thai, cashew chicken, spring roll, and panang curry. I like that they can make many of the dishes vegan, including the thai tea! The price might seem like a lot for one dish, but it's enough food for a least 2 meals. I also like that they give you a buzzer to notify you when your food is ready so that you don't have to wait by the truck the whole time. Caught Eim Thai when they were at First Magnitude. What a lovely truck. One of the best Thai meals I have ever had. I ordered native hot and they nailed it. A good amount of heat, but a lot of flavor, as well. The truck is run by two Thai ladies, with someone taking orders from them (son, grandson). Most likely some family recipes served. Fairly standard in the choices (no gang prik, for example), but the flavors are on point (albeit, like pretty much all Ameri-Thai a bit adjusted for our palettes). Was recommended to check this food truck out so I did! They have a facebook webpage that tells you where they will be at- usually it is somewhere in Gainesville not too far away. The line was long, so we had to wait for about 30+ minutes before we were able to order and pick up our food. We got #1 and #2 and they were both very savory. I've been going to Eim about once a week since I wrote this review, and felt compelled in my current curry afterglow to update my review. Time after time, they're just as good as the first time I went - maybe even better, but I'm not sure that's possible. The curry is outstanding, the pad Thai rips, and if they have the mango and sticky rice available, do yourself a favor and buy two. Plus they're really fast and just super nice people. This is the most amazing food you'ld never expect from a food truck. My in laws surprised us with dinner from here. We picked up lunch from this food truck today and the curry was Wonderful! I would submit a picture but we ate it all up. The curry was fresh and spicy.
