Pancakes are a proper test of a breakfast places mettle. They're so easy to mess up in their simplicity, execution is key. These were the best pancakes I've had in the last 20 years, not too soft or too firm, they slightly absorb the syrup but don't turn into a sponge. Maybe the only thing I'd like to see is a bit better execution on textures here. That is, crispy items should be more crispy -- fluffy items should be more fluffy.
