let's just say that this filled me up with so much food i didn't eat for the next 22 hours for the price (only 12 dollars) that's a ridiculous portion size where to even start these seemed to be soft tacos, but with a full melted cheese covering on both sides of the shell i would say that's my only slight disappointment - that these weren't really crispy at all - there was no real crunch when i would bite into one of them - rather it was just slightly harder than a soft taco the cheese did add a great flavoring to the outside though - making this more than a normal taco shell each taco was absolutely overflowing with stuffing - it got to the point where the plate became another full meal by itself from everything that fell out of the taco the two main components of each taco were the cheese and the chicken the cheese was so perfectly melted - may have been the best cheese in a taco i've ever had it created such a satisfying cheese pull every time you took a bite - and it was one consistency throughout, meaning every time you took a bite you had to pull the cheese away from the rest of the taco - which was just fantstic as for the chicken - i was slightly disappointed that it wasn't spicy in the slightest. However, it still tasted like it had a really nice flavor, and had a soft interior. It being actually spicy would've moved this dish up a lot, though each taco was primarily made out of this chicken - and there was so much of it it was practically insane - but I loved this amount shoutout to the onions as well - they were great I asked for the habanero sauce - which i thought was ok - wasn't spicy at all and didn't add much flavor. will go with another sauce next time tried mixing in some taco bell fire sauce which was interesting i love that these came wrapped in aluminium foil to preserve heat. a great touch overall, as far as taste, these were pretty good, but when you consider the amount of meat you're getting, along with overall portion size - it's simply a fantastic meal.

Really good tasting food! Some seating areas there so you can eat them fresh off the grill. I'd see it as a bit more upscale/urban than usual Mexican places. Recommended!

Always so busy whenever i drive by so i thought i would give it a try. I ordered shrimp tacos and a quesadilla with carne asada. Shrimp taco was very loaded and the flavor was just ok. My quesadilla was HUGE but when i took my first bite i bit into what was the nastiest piece of just like pure beef fat or something. It really ruined my appetite so i ended up removing all the beef because it grossed me out so bad. A lot of the cheese wasn't fully melted and there was more meat in it than cheese so I didnt even bother eating the other half. The service was good it was a bit of a wait for my food since there was a bit of a queue ahead of me. Unfortunately i dont think i will be back

Wow, this food truck is so popular! My husband and I got dinner for a Tuesday trivia night at Burke-Gilman Brewing, which is next door. My husband ordered a chicken quesadilla with chicken and veggies, which was HUGE! (He ate it over three meals) He said he would definitely order it again. I got two tasty tacos, the chicken mole and the grilled fish, which had good flavors and textures. You can order at the window or pre-order food online, which I highly recommend due to popularity, but considering the number of people ordering, the wait was reasonable. The guy taking orders was considerate and communicative; we totally understood the wait when he said he would be right with us as he quickly sent the previous order. Though they were slammed, orders went out with impressive ease. When we got food, we chose from a wide range of salsas, from no spice to very spicy. The non-spicy aguacate and mild verde I tried had great flavors and consistencies; my husband really liked the roasted and medium red salsas. There is a covered seating area with string lights near on each end of the food truck. Although rustic, the areas were comfortable, clean, and tidy. Great prices for tasty food made with good quality ingredients

I've been coming here for years and I love it! Their food is consistent, their prices are good for the amount of food you get, and you can tell they use high grade ingredients. The employees are always super friendly and the seating area is always clean. 10/10

I came here because a friend recommended it, saying it was one of the best Mexican food trucks around. As a true food lover, I had to see it for myself and I can honestly say it exceeded my expectations. I ordered the chicken quesadilla and my friend got the Mexican plate no joke, it was possibly the best Mexican food I've ever had in my life. So flavorful, fresh, and well prepared. I'll definitely be coming back!

The first thing that stand out to me is the tortilla which is a yellow crispy consistency. It is delicious and it looks like it could be a buttery crisp French pastry of sorts even though I realized it was most likely just crisped up. The burrito I ordered is very interesting. It tasted more like a chicken pizza or a Mexican style fry bread. The burrito has feta and mozzarella tasting cheeses and the burrito is less burrito tasting and more cheese forward. The inside of the burrito is shredded chicken and whole beans which makes this burrito filling and the portion is generous. I don't mind this as I'm taking this place as fusion. If you look at the menu they specialize with Birria and this makes sense if it's the same tortillas used. The options are odd but they are eye catching like ramen birria. I look forward to trying their specialty soon. The salsas are really nice and mild and they give the right amount of kick. Seattle prices are astronomically high. They have tablets to order from, QR codes, and of course you can order straight from the food truck. I really liked how the tablets also offered common modifications, so the egg on mine was easy to order fully cooked through. I didn't love how buttery the caramelized kimchi was. It completely takes away from the flavor, so all I really could taste was butter. Kimchi aside, there are so many generous toppings and it really compliments the salty meat and seasoned rice. They also have a big condiment tray so you can even top your food with extra pickled veggies, sauces, and the like. My kids devoured the rice. Their packaging is fully compostable or recyclable. This one was pretty much just a regular soft taco with beef inside. I wasn't a huge fan of the taco shell, as it was a little soft. In terms of the filling, I did really like the amount of beef in there, but I thought it was kind of dry and chewy. The beef being like this was something I noticed in all 3 tacos - but it was the most noticeable in this one I really liked the quesabirria taco - that extra layer of cheese did so much for the flavor. For one, it provided another layer between the taco shell and the cheese, and second, the cheese itself was really good and there was a lot of it. Because of this, the beef inside just tasted better than the regular birria - and the shell on the outside didn't feel as soft as the first one. My favorite of the three was the mulita, which came as two small tortillas with the filling inside. the reason I liked this the most was because it was the crispiest of the three - there were actual crunchy parts to this tortilla that weren't there in the other ones. This one also had cheese like the birria, but due to the slight advantage in crunchiness it's my favorite Of course, what really brings this entire meal together is the consommé. This is just absolutely fantastic - and is the best part of the meal by far. The broth is salty, flavorful, and just adds so much to everything it coats. When dipping one of the tacos in it, I would let the consommé wash over the beef that remains, essentially liquidifying it, and this made the beef so much juicier and changed it from dry to flowing with the juices of the broth. It's hard to describe how much this enhanced the two tacos and the mulita. There's also a pretty generous amount of it Another thing I have to mention is the spicy salsa - which was incredibly flavorful. really loved that The only thing I would really say as a negative (other than the beef that I mentioned before) is that these tacos/mulita really aren't crunchy at all. I wish the tortillas would've been fried more to really get that crispiness that I prefer in tacos - an oil coating on the outside would've also helped. I also usually don't mention this in my reviews, but the person at the front desk was amazing! For the price of about 15 dollars, I would say this is relatively decent - however, while the portion size looks big, it's not really that filling

Despite the trek, I'm pretty happy to say that this was absolutely worth it as maybe the highest quality Mexican food in the Seattle area. The dishes here are not what you find at your typical Mexican restaurant. There's no chips and salsa, and the menu is small - only around 4 entrees and 4 small plates, along with a few appetizers. It's best to come here with someone else and find things to share - which is what I did with the small plates, since some of them come with two per order. We ended up ordering the maiz sourdough, the albacore tostadas, the brisket tacos, and tetela - finishing with the pan de elote for dessert. I'll start with what is absolutely their signature dish - the albacore tuna tostadas. I'm willing to say that this is the best dish I've ever had at a Mexican restaurant. It comes in two tostadas - each with raw albacore tuna, mayo, avocado, and fried leeks - and oh my goodness is it spectacular. Everything starts from the base of it all - the tostada itself, which is so far and away the best tostada I've ever had it's not even a debate. Years of having tostadas shatter, or even crack on each bite left me fully unprepared for what was to come; a tostada that behaves like an architecturally sound disc. Seriously, you take a bite of this and the entire rest of it remains wholly intact. It's like a miracle. The texture reminds me of a Frito, it's got those slightly raised bumps and a similar thickness. And I haven't even gotten to the toppings yet. The raw tuna on top is perfect sashimi - it's soft, just fatty enough, and absolutely slides through your mouth at the lightest chew. There's also a lot more of it on the tostada than I expected. The kewpie mayo has a surprising spice to it - like the best version of spicy mayo that you've had; except it has a bit of a smoky flavor to it as well. The avocado adds earthiness, chill-ness, and a good level of fat. Lastly, the fried leeks on top provide that extra crunchy layer just to cap it all off. It's simply one of the best constructed dishes I've seen. It took a lot of willpower not to order another set of these. The other two small plates were good, but don't quite match up. The brisket tacos are small, but filled with toppings, including a ton of the dry-aged suadero. This beef was very good, containing a lot of fat and being quite juicy in each bite. I also loved the tortillas, which were some of the best corn tortillas I've had. It's clear they nixtamalize the corn used for these in-house. Still, this didn't feel that much more than a good taco. The tetela was also fine, but nothing too special as mostly just eggplant on the inside. Something else that was amazing though, was the maiz sourdough we ordered. It's easily one of the best bread appetizers I've had. The outside is so crispy without being too chewy, while the inside is hot, fluffy, and so easy to tear apart. I simply can't get over how amazing the crust is on this bread - it wraps all the way around, and is baked to absolute perfection. The included honey butter is also really well salted and sweet, but I do wish there was more of it. For dessert, we had the pan de elote - which is a sweet corn cake with blackberry jam and a whipped cream. I found the whipped cream fascinating; rather than being too sweat, it instead had a lighter flavor that focused more on the soft and creamy texture than traditional whipped cream. The combination of the super-fresh blackberry jam and texture of the whipped cream added a ton of moisture to the corn cake - which otherwise resembled kind of a sweet cornbread. Also, the portions on the cake were crazy good. All that said, this is quite an expensive place. For what we had, per person it ended up being over $60 without any drinks. For the tostada and tacos especially, you're paying 10+ dollars/person for a single tostada or taco. I would say it's worth the price for the tostada, but not for the taco. Overall, it is certainly high-end, but the quality of food here is so high it's an absolute recommend from me. 9.25/10

Legitimately that good. I honestly came by Pancita from an Eater article and Instagram post and jokingly suggested it to my friend when we already had dinner/drink plans. We both collectively lost our minds and decided, it was DOUBLE DINNER night and made 8:15 pm resys at Pancita. I do highly recommend reservations by the way, esp on weekend nights. We thankfully found street parking just outside and were seated promptly. Truly loved how simple and charming the interior was. I'll be honest, we were dying from 1st dinner even though we only ate a few bites but being gluttons, we got the tomato salad (my favorite bite of the entire evening), my friend got the suadero tacos for herself, and I ordered the enfrijoladas (mushroom) with a side of tortillas -- I couldn't resist! Everything I tasted was delicious and I am honestly planning my next trip back ASAP. We, of course, couldn't resist dessert cause WHEN I TELL YOU THAT CORN CAKE HAS MY ENTIRE HEART.
