Love this place! Tried it for the first time last week. The service was great, the food came out super quick, everything tasted nice and fresh. I can't recall the name of my dish but it was shrimp wrapped in bacon wrapped in ham and then smothered with a thick melted cheese. It was amazing! We went early-ish on a wednesday and got a table right away around 4:00pm. I could see how this place might get a little packed on weekend evenings though. To me a restaurant is built on three things, the location/building, the staff/service, and the food. Today, unfortunately, Cubilete disappointed in 2 of 3. We visited the new location today for the first time and that's when the problems started. 3 feet in the door is the basic podium and 3 feet beyond that is the bar. In this tiny space you have the hosts (when they're not cleaning tables), waiting customers, servers trying to get through, and the bar patrons. In short, it is the worst designed restaurant I have ever seen, ever. It's ugly and cluttered and everywhere are staff running around crashing into other staff and customers. After we were seated I felt corralled in the eating part of the restaurant, hardly a dining room. So what service did I expect in this chaos created by such a cluster of poor design? Not much and that's what was delivered. The bartender took no less than 10 minutes to get 3 basic drinks for the trio sitting next to us, he kept disappearing and returning with nothing. Glasses are not stocked at the bar either, he goes gets them 1 at a time from the server station, across server and customer traffic, and through a door. Once seated service was ok but not friendly and mostly awkward. Eventually I got the bill and that's when the server disappeared. 10 minutes later I got one of the host kids to run the bill for me and that took 3 of them struggling with the only register in the place for what seemed like eternity. Finally... The food was ok, Americanized Mexican is what it is. Portions were somewhat smallish but ok, prices were ok. We had the guacamole salad app and it was 1oz of guacamole on a big bed of iceberg lettuce, yuk. We both had fajitas, ok, nothing special. They are hard workers, I wish them luck. I've dined at this business numerous times and most recently the service has declined tremendously. The wait times are inaccurate, the servers are not attentive and the food orders are incorrect time and time again. Worst Service Ever! Was there for an hour and a half. Our waitress brought us one round of drinks and barely took our order. When I gave her $20 for the two drinks and told her we were leaving she said, "That's not enough! I'm calling the cops!!" She followed us to our car and filmed us on her phone. When you ask the waiter for something there's a good chance you'll wait almost 10 min for it. After reading the reviews we were looking forward to our 1st visit. I must say we were very disappointed. Service was very slow. I love Mexican food but this was not good. My wife got a taco salad which was very small. I ordered a combo plate which was greasy and very salty with little taste. The whole plate was covered with a watery/greasy pool. The first thing i noticed was the restaurant is kinda dingy. Years of dirt and grime accumulating along the intersection of the floor and wall and the faded paint and dusty decorations. Rice and refried beans with a small bed of chopped iceburg lettuce and avocado sauce (guacamole??) came on the side. Hated the frozen corn, peas and green beans in my rice. The fajitas lacked flavor....period. not sure if they seasoned them at all. The portion size was good though. My wife got the chile verde. Large portion again....but lacked flavor!! (Do they salt anything here??) One of my kids got the chimichangas. Tasty! The shredded chicken was cooked with poblano peppers. And my other child got the mixed tacos with pork and chirizo. Also pretty tasty, although the chorizo was mild. Overall i think the quality of food was decent. Just wish they seasoned the food more. Maybe they are cooking to please their northern clientele. So many of the reviews highlight the authenticity of this place....not sure if any of them have much experience to compare to. Anyway...they have some good things going. read more

Nice Mexican restaurant. Wait staff was very friendly and prompt with refills of drinks and salsa & chips. The complimentary warm chips and fresh salsa were delicious! I ordered the Quesadilla Roja, it was delious with seasoned ground beef, peppers and cheese with a delicious sauce. Served with rice, which was light and fluffy and seasoned nicely. My lunch buddies ordered the steak fajitas and chicken chimichanga, they enjoyed both of them. Their only complaint being the meat was a bit overcooked in both meals. They gave us the wrong order and we had to go back there to pick up the correct order. When getting there they had the audacity to charge us the difference from the wrong order. In my head the formula is pretty easy if you have great home made recipes which apparently they do. All the dishes have a unique flavor and everything on the plate has a wonderful distinctive flavor.
