The walk was easy, and when we arrived, the packed parking lot immediately told me this was the right place to stop. This is authentic tacos de guisado style, similar in concept to places like Tacos West Ave in Texas, but the execution here is on another level. They offer a wide variety of options including suadero, lengua, al pastor, cabeza, chorizo, tripa, along with tortas and quesadillas. I ordered the tripas, which can be hard to find done correctly. These were easily the best tripas I've ever had. They were extremely flavorful and tender. I usually prefer them crispy, but after seeing how busy the place was, I trusted their preparation -- and it paid off. Each order comes with four mini tacos, and I could have easily eaten more. Even the corn tortillas stood out. They had noticeable flavor, likely from being cooked on a well-seasoned plancha or possibly dipped in the guisado juices before grilling. The salsa was generous and full of flavor, and everything tasted like it was made with care and attention. This place reminded me of one of my favorite spots in San Antonio, Mini Tacos Toribios. While the style is different, the same level of passion and quality is there. At $13.99, the price is fair for the portion and quality. I would gladly pay it again. Next time I'll be ordering multiple taco plates along with a torta and a Mexican Coke. This is a 10/10 spot. I wouldn't change anything. I'll make it a point to stop here every time I'm in Denver.

That last point is the hardest thing to find! But after stopping here one day on my drive home, this taco truck has become a regular favorite of mine for years now! They offer other items besides tacos but I have never tried them because their tacos are the star. The carne asada tacos are great but my favorite tacos that I have ever tried (and this includes tacos ive tried in Mexico itself) are the Al Pastor tacos with cilantro, onion and the pineapple. It is so, so good! The al pastor meat is marinated nicely and is packed with flavor and the sweetness from the pineapple pair perfectly with it. And like I started out commenting, these tacos are not dripping in oil or grease. In fact, I rarely see any oil in them at all! It makes the entire experience that much better! I like to put their red salsa on for an added kick while my mom likes the green salsa for a milder yet just as tasty flavor. Make sure to put some lime on it too! We had three tacos, one pastor, one carnitas, and one asada, they were all delicious but the pastor was definitely the winner. But the overall winner was actually surprisingly the quesadilla with carnitas, for whatever reason it was one of the best quesadillas I've ever had.
