This isn't some small part time operation, it's a highly organized profession plant. I have friends that fight over getting their sausage and salami when I share. They are diligent about how roast etc. are butchered. The smokers are industrial custom made in Germany. Someone complained about the smoked links casing being tough . All the meat we had processed with Kuby's was cooked. We ordered bratwurst, spicy breakfast links, hunters stick, smoked link, and a venison salami (jalapeño/cheese), it's all shamefully delicious! Everything comes in large bags that has colored twisty ties. Those ties tell you what you have in the bag. Anyhoo, We got some incredible meats. I'm using my Cabala's commercial grade sealer to seal 50 plus lbs of processed food. I think this will be an all nighter to seal it all. 2017/37

I would however like to see more premium options, like for example Allen Brothers beef products like their Waygu burger patties, or just other bespoke options like Iberico pork. They are also one of the few places that still carries veal cutlets (scaloppine), which I highly recommend as a staple protein which cooks up in just a few minutes, and is relatively affordable. Throw a couple in the freezer, combine with dry pasta, garlic, parsley, pecorino/parmesan, and a good olive oil and you can have a stellar meal with little time or expense.
