Carnitas is a pork dish where the pork is slow cooked and cut in to chunks then fried for a crispy finish. It is usually served with a sauce and tortillas. The pork was not only tender, but it did have the flavor profile that I expect when I order carnitas. The other great thing about Los Agava is the margaritas. There is usually a margarita of the month. This month was banana so I stuck with my usual blue margarita. WOW. These are some strong drinks. They tasted homemade and very good. I ordered the chicken and pastor tacos with everything (cilantro, onions, lime) and also tried the pork tamale with green sauce. My bf had a chicken burrito. Everything was excellent, but the tamale was just a tad dry, but did taste homemade which was a plus. The tacos were well seasoned and the burrito was huge so we had leftovers.
